This is a tarte tatin that switches sides, sweet in technique, savory on the plate. Cherry tomatoes slowly soften over a bed of caramelized onions, while puff pastry soaks up the juices as it bakes golden on top. Once flipped, the glossy tomatoes and onion caramel rise to the surface, and the salad on the side brings the freshness the tart would otherwise lack.
This is a summer recipe, best made when cherry tomatoes are sweet and full of sun. It takes a bit more attention than a classic tart, mostly because of the caramel and the flip, so it suits a dinner where you have a little time, or a meatless dish for guests. Kids who like roasted tomatoes tend to enjoy it too, as long as they're fine with soft onions.

The step by step recipe
-
Cook the sliced onions in the butter with the sugar, vinegar, salt, and pepper until soft. 10 min
Let them caramelize without stirring, you want a deep brown caramel.
-
Spread this onion caramel over the bottom of a buttered tart pan, then pack the tomatoes in tightly, rounded side down.
Pack them in tightly, they shrink as they cook.
-
Sprinkle with thyme and cover with the pastry, tucking the edges down into the pan.
Prick the pastry with a fork so steam can escape.
-
Bake at 190°C until the pastry is nicely golden. 30 min
Set the pan on a baking sheet, a little juice might bubble over.
-
Let it cool for five minutes, flip onto a plate, and serve with the dressed salad. 5 min
Run a knife blade around the edge of the pan before flipping.
Our tips to get it right
- Pick firm, evenly sized cherry tomatoes, they cook more evenly and hold their shape when sliced.
- Blot the tomatoes on paper towels before arranging them in the pan, this keeps the pastry from turning soggy.
- Butter the pan generously before adding the onion caramel, the flip depends on this as much as on the tart's temperature.
The variations
- Swap the cherry tomatoes for halved plum tomatoes for a more rustic tatin, the cooking times stay about the same.
- Add a thin layer of crumbled fresh goat cheese over the onions before the tomatoes for a richer version, great for guests.
- For kids, cut the tart into small square pieces and serve the salad on the side, they'll pick at it more easily without dressing on top.
What to serve it with
- A glass of chilled white grape juice
- Parmesan shavings over the salad
- Grilled country bread
Storage
The tatin keeps for 2 days in the refrigerator in a sealed container. It doesn't freeze well, the puff pastry turns soft once thawed. Reheat it for a few minutes in the oven rather than the microwave to keep the pastry crisp.
Questions about this dish
Can you make tomato tatin ahead of time?
You can bake the tart a few hours ahead and warm it in the oven before serving. Avoid flipping it too early, do that just before reheating or serving so the caramel stays on top.
What kind of puff pastry works best for this tart?
A store bought all butter puff pastry works well and holds its shape nicely. If you have time, homemade shortcrust also works but will be less crisp.
Why won't my tatin come out of the pan cleanly?
This usually happens when the pan wasn't buttered enough or the tart cooled too long before flipping. Run a knife blade around the edge and flip while it's still warm.
Can you use regular tomatoes instead of cherry tomatoes?
Yes, halved plum tomatoes work well and give a more rustic look. Pick firm tomatoes so they hold together during baking.
