A Swiss chard tortilla is a thick omelet cooked slowly so it stays moist in the center while setting firm at the edges. The green of the wilted chard blends with the yellow of the eggs, and parsley adds a fresh note. It's a hearty dish, nothing like the thin omelet you whip up in two minutes.

It's a great choice for a weeknight when you want something simple but filling, or for a summer lunch with friends, served warm or cold. The tomato salad and a slice of country bread turn it into a complete meal, no meat or fish needed.

The step by step recipe

  1. Separate the chard leaves from the stalks, cut the stalks into small pieces and boil them before adding the leaves. 8 min

The stalks need two or three minutes longer than the leaves.

  2. Drain the chard, press it firmly in a kitchen towel and chop it roughly.

Press it in batches, it should end up as a tightly packed ball.

  3. Sauté the chopped onion and garlic in three tablespoons of oil, add the chard and let it dry out for two minutes. 8 min

Let any remaining water evaporate completely before pouring in the eggs.

  4. Beat the eggs with the parsley, salt and pepper, pour over the chard and cook over low heat, then flip the tortilla using a plate. 12 min

Slide the tortilla onto the plate, cover with the skillet, and flip in one confident motion.

  5. Make the tomato salad with the red onion, vinegar, remaining oil, salt and pepper, and serve with the bread.

Salt the tomatoes ten minutes before dressing them, they'll release water and taste stronger.

Our tips to get it right

  • Use a nonstick skillet around 24 cm wide, it makes flipping the tortilla much easier.
  • Cook the tortilla over very low heat, it should set slowly so it stays moist without burning underneath.
  • If flipping feels tricky, you can finish cooking it for a few minutes under the broiler instead.

The variations

  • Swap the chard for fresh spinach, it will cook a bit faster.
  • Add diced cooked potatoes to get closer to a classic Spanish tortilla.
  • For kids, cut the tortilla into small warm squares and skip the salad if the acidity isn't their thing.

What to serve it with

  • Toasted country bread
  • Glass of homemade lemonade
  • Small grilled pepper salad

Storage

The tortilla keeps for 2 to 3 days in the fridge in a sealed container. It tastes just as good cold as gently reheated in a skillet or oven. It doesn't freeze well, cooked eggs change texture.

How do you flip the tortilla without breaking it?

Slide the tortilla onto a large plate, place the upside down skillet on top, then flip the whole thing in one firm, quick motion. Slide the tortilla back from the plate into the skillet.
