Sulguni mushrooms are a Georgian dish of pan fried white mushrooms topped with melted mozzarella and feta, flavored with garlic and cilantro. This recipe for 4 people takes 30 minutes, is very easy to make, and costs €2.50 per person. The key to success is cooking the mushrooms dry first so they don't boil in the butter.

In Georgia, sulguni is a stretchy melting cheese used to top freshly pan fried mushrooms. Here, mozzarella and feta recreate that combination, one for the stretchy melt, the other for the salty tang. The result is tender mushrooms hidden under a golden crust, with raw garlic adding bite and fresh cilantro bringing a green finish.

This is a dish you can throw together on a weeknight without much thought, using ingredients you likely already have in the fridge. Mon Chou loves it for the individual baking dishes, perfect to set in front of each person with a piece of bread for dunking. Kids love pulling at the stretchy cheese, and adults appreciate how generous it feels without any fuss.

The step by step recipe

  1. Clean the mushrooms with a damp cloth and cut them into quarters.

Never soak them in water, they absorb it like sponges.

  2. Cook them dry in a large hot skillet until they release their water, then let it evaporate. 8 min

Only salt at the end, salt would make them release too much water.

  3. Add the butter and chopped garlic, let it brown for two minutes, season with salt and pepper. 3 min

The garlic shouldn't brown too much, it would turn bitter.

  4. Divide the mushrooms into four small baking dishes, top with sliced mozzarella and crumbled feta.

Feta brings the salty tang of sulguni, you can adjust the proportions to taste.

  5. Bake at 220°C until the cheese melts and browns, sprinkle with cilantro and serve with bread. 8 min

Finish for a few seconds under the broiler for nice golden spots.

Our tips to get it right

  • Cut the mushrooms into even quarters so they all cook at the same speed.
  • Use a wide skillet and don't overcrowd it, otherwise the mushrooms steam instead of browning.
  • Pick small baking dishes that are oven safe and can handle the broiler for that golden finish.

The variations

  • Swap the feta for a mild blue cheese for a sharper flavor.
  • Add fresh spinach sautéed with the mushrooms for a heartier version.
  • For kids, skip the cilantro and serve with individual bread rolls instead of a loaf to share.

What to serve it with

  • Grilled country bread
  • Simple green salad
  • Black tea or herbal infusion

Storage

The mushrooms keep for 2 days in the refrigerator in a sealed container, without the bread. Reheat them in the oven so the cheese melts again without turning rubbery. Freezing isn't recommended, the melted cheese dries out as it thaws.

Questions about this dish

Can you replace sulguni with something other than mozzarella and feta?

Yes, you can use Swiss cheese or Gruyère for the melt, paired with a sheep's milk cheese for the salty kick. The key is combining a stretchy cheese with a sharper one.

Do you need to wash the mushrooms before cooking?

No, wipe them with a damp cloth instead of soaking them in water. Mushrooms are very porous and soak up water like sponges, which makes them less flavorful once cooked.

Can you make this dish ahead of time?

You can cook the mushrooms ahead and keep them in the refrigerator for a few hours. Add the cheese and bake just before serving so it comes out melted and golden.

What kind of bread works best with sulguni mushrooms?

A country loaf with a dense crumb works well since it doesn't get soggy too fast. You can also toast it lightly so it keeps some crunch.
