This is the kind of dish that comforts without any fuss. The baked potato turns tender inside while its skin stays crisp, and the ground beef and onion filling, mixed with the mashed potato flesh, gives it a softness you don't get from a plain meat filling. The melted emmental on top adds that golden, stretchy finish that appeals to every age.
It's a good dish for a calm weeknight or a relaxed Sunday, when you have a bit of time but don't want to watch a pot the whole evening. Kids love digging into their own potato to find the filling underneath, and a simple green salad on the side is all you need to round out the meal.

The step by step recipe
-
Preheat the oven to 200°C, prick the potatoes and bake them whole. 50 min
Pick potatoes of similar size so they finish baking at the same time.
-
Meanwhile, cook the chopped onion and garlic with the beef, season with salt and pepper. 10 min
Let the meat brown well, it makes the filling taste better.
-
Cut a cap off each potato and scoop out the flesh, leaving a border.
Use a kitchen towel to hold them, they're very hot.
-
Mash the flesh with the cream and mix it into the meat, then fill the potatoes.
A splash of cream makes the filling soft, you don't need much.
-
Sprinkle with emmental, bake again until the cheese melts, and serve with the dressed salad. 10 min
Finish under the broiler to brown the top.
Our tips to get it right
- Prick the potatoes well before baking, otherwise trapped steam can make them burst in the oven.
- Leave a thick enough border of flesh when hollowing out the potatoes, or the skin won't hold once refilled.
- If the filling looks too dry before stuffing the potatoes, add an extra spoonful of cream rather than water.
The variations
- Swap the ground beef for sausage meat or ground veal for a milder filling.
- For a vegetarian version, replace the meat with chopped mushrooms and cooked lentils, the mix with mashed potato works just as well.
- To save time, prepare the potatoes and filling the day before, then just stuff and broil them the next evening.
What to serve it with
- Green salad with vinaigrette
- A glass of sparkling water
- Stewed tomatoes in summer
Storage
Stuffed potatoes keep for 2 to 3 days in the fridge in a sealed container. They freeze well once filled, before the final broil. Reheat them in the oven rather than the microwave so the cheese melts nicely again.
Questions about this dish
Can you prepare stuffed potatoes ahead of time?
Yes, you can hollow out the potatoes and make the filling the day before. Keep them separately in the fridge and assemble just before the final bake so the cheese melts fresh.

Can you freeze stuffed baked potatoes?

Can you use a different cheese instead of emmental?
You can use comté, gruyère or shredded cheddar, whatever you have on hand. The key is a cheese that melts well and browns nicely under the broiler.
