A stone grill brings together three meats, beef, chicken, and pork tenderloin, sliced so thin they cook in just seconds on the hot stone. Alongside, you'll find hot potatoes and a few sauces, tartar, pepper, mayonnaise, so everyone can build their plate exactly how they like it. It's a meal that's as much about sharing as it is about cooking, with no real technique required.

This is the perfect dish for a winter dinner when nobody wants to be stuck standing at the stove. Kids love grilling their own little pieces of meat, and adults get to enjoy that simple pleasure of eating slowly while chatting as the stone heats up right on the table. It's a great pick for a weekend meal with family or friends, with zero pressure to get it perfect.

The step by step recipe

  1. Steam or boil the potatoes in salted water. 25 min

Keep them warm, they need to stay piping hot.

  2. Arrange the meats on separate plates so they don't mix.

Covering the plates with plastic wrap keeps the meat from drying out.

  3. Prepare the sauces in small ramekins and wash the salad.

Plan for at least three different sauces.

  4. Heat the stone on the burner until a drop of water sizzles on it, then oil it very lightly. 10 min

The stone needs to be very hot before you start.

  5. Grill each slice for a few seconds on each side and serve with potatoes and sauces.

Salt only after cooking to keep the meat tender.

Our tips to get it right

  • Take the meat out of the fridge fifteen minutes before slicing it, it cuts more cleanly and stays more tender on the stone.
  • Don't overload the stone, two or three slices at a time is enough so the meat actually grills instead of steaming in its own juices.
  • Set the sauce ramekins and potatoes within reach of every guest before you turn on the stone, so nobody has to keep getting up.

The variations

  • Swap the pork for shrimp or scallops for a surf and turf version that's a nice change of pace.
  • For a vegetarian version, slice up firm tofu, mushrooms, and firm vegetables like bell pepper or zucchini.
  • To save time, buy the meats pre sliced from the deli counter and serve with store bought sauces instead of homemade.

What to serve it with

  • A well dressed green salad
  • Fresh bread for the sauces
  • A glass of light red wine

Storage

Raw meats keep in the fridge until you're ready to serve, but they shouldn't be frozen once sliced this thin for a stone grill. Cooked leftovers keep for 2 days in the fridge in a sealed container and reheat quickly in a skillet. Cooked potatoes also keep for 2 to 3 days and reheat well steamed or pan fried.
