Here, potatoes take on a completely different texture. Cut into very thin matchsticks and stir-fried over high heat, they keep a real bite, almost like a crisp vegetable, far from mashed potatoes or fries. White vinegar and soy sauce bring a tangy, salty edge that wakes everything up, while garlic and dried chili flavor the oil from the very first seconds of cooking.

This is a weeknight dish that breaks up the routine without needing a complicated shopping list. Kids like breaking the egg yolk into the warm rice and mixing it with the potatoes, and adults can adjust the chili to taste. Plan this one for a quick dinner, not for a lazy Sunday meal that simmers for hours.

The step by step recipe

  1. Peel the potatoes, cut them into very thin matchsticks and rinse them in several changes of water, then drain. 10 min

A mandoline makes even matchsticks, otherwise a sharp knife works fine.

  2. Cook the rice in a pot of salted water, then drain. 11 min

Keep it covered so it stays warm.

  3. Sauté the dried chilies and garlic in 3 tablespoons of oil for 30 seconds, add the potatoes and stir fry over high heat. 6 min

Keep stirring constantly, they should stir fry, not simmer.

  4. Add the vinegar, soy sauce and salt, stir fry for 2 minutes until the matchsticks stay slightly firm, sprinkle with scallion. 2 min

Taste a matchstick, it should still have a slight snap.

  5. Fry the eggs in the remaining oil. Serve everything with the rice. 3 min

Keep the yolk runny, it coats the rice.

Our tips to get it right

  • Cut the matchsticks as thin and even as possible, they'll cook at the same rate and stay crunchy together.
  • Prep every ingredient before you turn on the heat, the potatoes cook fast once the pan is hot.
  • Use a wide skillet or a wok, the matchsticks need room to stir fry without piling up and going soft.

The variations

  • Swap the dried chili for a pinch of chili powder if you don't have any on hand, the dish stays just as flavorful.
  • For an egg-free version, stir fry some diced firm tofu in the same pan right before serving.
  • For kids sensitive to spice, remove the dried chilies before serving and keep just the flavor they left behind in the oil.

What to serve it with

  • Hot green tea
  • A vinegared cucumber salad
  • Extra steamed vegetables

Storage

The potatoes keep for 2 days in the fridge in a sealed container, though they lose some crunch. Reheat them in a hot skillet rather than the microwave to bring back some crispness. This dish doesn't freeze well, the matchsticks would turn soft.

Questions about this dish

Why do you need to rinse the potato matchsticks?

Rinsing removes the starch released by the thin cut. Without it, the matchsticks stick together and to the pan, and they cook softer instead of staying crunchy.

Can you prep the potatoes ahead of time?

You can cut them and soak them in cold water for a few hours before cooking, just drain them well right before. Cook the dish at the last minute though, to keep the crunch.

What vinegar can I use instead of white vinegar?

Rice vinegar or distilled vinegar works just as well and stays mild in flavor. Skip balsamic vinegar, it's too sweet and too dark for this dish.

Which potato variety works best?

A firm, waxy potato like a fingerling or Yukon Gold holds up better to quick cooking. A starchy potato would break apart and turn mushy in the pan.
