This pizza is a nice change from the usual ham and cheese, with seafood that brings a briny flavor without overpowering the dish, thanks to a quick sear in a pan with garlic. The crust stays crisp underneath, the mozzarella melts into a protective layer, and fresh parsley adds a bright note straight out of the oven. The green salad on the side lightens things up and adds crunch.

This is a weeknight recipe, quick to put together with store bought dough and a bag of frozen mixed seafood you can keep on hand in the freezer. It also works for casual summer entertaining, without spending hours in the kitchen. If your kids aren't into seafood, make a margherita version alongside, the rest of the recipe works the same way.

The step by step recipe

  1. Preheat the oven to 240°C. Thaw the seafood.

Pat the thawed seafood dry with paper towels, otherwise the pizza turns soggy.

  2. Sauté it for 2 minutes with the garlic. 2 min

Take it off the heat as soon as it's seared, it will finish cooking in the oven.

  3. Spread the tomato sauce over the dough.

Leave a one centimeter border without sauce, it puffs up and browns better.

  4. Add the mozzarella and seafood, then bake. 15 min

Add the mozzarella before the seafood, it shields it from direct heat.

  5. Sprinkle with parsley and serve with the salad.

Dress the salad at the last moment, it stays crisp.

Our tips to get it right

  • Pick a frozen seafood mix that already includes squid, mussels and peeled shrimp, that way you skip any sorting before cooking.
  • Really preheat your oven to 240°C before baking, a pizza that heats up gradually ends up with a soggier crust.
  • If your dough is thin, pre bake it plain for 3 minutes before adding the toppings, it will hold up better under the weight of the seafood.

The variations

  • Swap the mixed seafood for shrimp only if you prefer a milder, less briny flavor.
  • For a vegetarian version, skip the seafood and add black olives, grilled zucchini and a pinch of oregano.
  • To save time, use pre rolled pizza dough and already seasoned tomato sauce, cutting prep time down to 10 minutes.

What to serve it with

  • A squeeze of lemon on the salad
  • A glass of dry white wine
  • Sparkling water with lemon

Storage

The pizza keeps for 2 days in the fridge in a sealed container. It doesn't freeze well because the seafood releases water as it thaws. Reheat it in the oven at 180°C for 8 to 10 minutes to get the crust crisp again.

Questions about this dish

Can I prep the topping ahead of time?
