Savoyard farçon fills you up without ever feeling heavy. The texture sits somewhere between a gratin and a potato custard, with crisp little bits of bacon and the surprising sweetness of prunes melting inside. It's a dish that tastes like the mountains, simple and hearty, built to keep you warm after a day outdoors.

This is the kind of recipe to make on a slow winter Sunday, when you want to cook without hovering over a pan. Kids tend to love it because it's mild and familiar, while adults get that grandmother's kitchen feeling. The green salad on the side brings just enough freshness to balance the richness.

The step by step recipe

  1. Peel and grate the potatoes, then squeeze them dry in a kitchen towel.

Keep them away from the air, they darken quickly.

  2. Cook the diced bacon with the chopped onion in a skillet. 8 min

The bacon melts in its own fat.

  3. Whisk the eggs with the milk, cream, salt, and pepper, then mix with the potatoes and bacon.

Taste the raw batter, it's the right time to adjust the salt.

  4. Pour into a buttered dish, press the prunes in, and bake at 180°C. 1 h

If the top browns too fast, cover it with a sheet of foil.

  5. Serve with the salad dressed in vinaigrette.

Let the farçon rest ten minutes so it holds together.

Our tips to get it right

  • Grate the potatoes right before mixing so they don't darken or release extra water while they sit.
  • Use a wide baking dish rather than a deep one, the farçon cooks more evenly and forms a nice crust on top.
  • Check doneness by inserting a knife tip into the center, it should come out without any liquid batter clinging to it.

The variations

  • Swap the smoked bacon for plain diced bacon if you prefer a milder, less smoky flavor.
  • For a vegetarian version, skip the bacon and stir in a handful of grated Comté to keep some depth of flavor.
  • For kids in a hurry, pick the prunes out of their portions and serve them on the side instead.

What to serve it with

  • Green salad with vinaigrette
  • Savoyard cold cuts to start
  • A glass of white wine from Savoie

Storage

Farçon keeps for 2 to 3 days in the fridge in a sealed container. It freezes well in individual portions for up to 2 months. Reheat it in the oven rather than the microwave to keep its soft texture.

Questions about this dish

Can you make farçon ahead of time?

Yes, you can mix the batter the day before and keep it in the fridge. Pour it into the dish and bake only when you're ready to eat so it holds its shape.

Why do you need to squeeze the grated potatoes so well?

Grated potatoes release a lot of water, and that water would stop the farçon from setting properly. Pressing them in a kitchen towel gives you a firm bake instead of a watery mush.

Can you leave out the prunes?

Some traditional versions skip them, so you can leave them out without changing the dish too much. If you want to keep a touch of sweetness, raisins work just as well.

Does farçon freeze well?

Yes, it freezes nicely in individual portions for up to 2 months. Thaw it in the fridge before reheating it gently in the oven.
