This dish pairs the grilled flavor of pan browned sausages with peppers that slowly soften in a tomato sauce lightly lifted by white wine. Red and yellow peppers add color and a touch of sweetness, while Italian or pork sausages give the whole thing character. The country bread, dipped into the sauce, becomes almost as important as the meat itself.

It's an ideal weeknight recipe, quick to put together and popular with kids thanks to its soft texture and the mild taste of slow cooked vegetables. It also works for a casual dinner with friends, served straight from the pan with bread on the side so everyone can help themselves. Mon Chou often suggests it in summer and fall, when peppers are at their best.

The step by step recipe

  1. Cut the peppers into wide strips and slice the onions into thick strips.

Keep the pieces generous, they shrink by half as they cook.

  2. Brown the pricked sausages in a large skillet with the oil, 8 minutes, turning them, then remove them. 8 min

Don't flip them constantly, let each side get a good color.

  3. In the cooking fat, soften the onions, garlic and peppers over medium heat. 15 min

Cover the skillet for the first five minutes, the vegetables release their water and soften faster.

  4. Deglaze with the white wine, add the tomatoes, return the sausages and let simmer covered. 15 min

Scrape the bottom well while deglazing, the browned bits give the sauce its grilled flavor.

  5. Add pepper, taste before salting, and serve with the bread cut into thick slices for dunking.

Pop the bread in the oven for 3 minutes, the crumb gets crisp and soaks up the sauce better.

Our tips to get it right

  • Pick sausages that aren't too lean, their fat flavors the whole sauce as it cooks.
  • If the sauce looks too thin at the end, let it simmer uncovered a few more minutes so it reduces.
  • Cut the peppers right before cooking, they hold their shape better than if they sit cut in the fridge.

The variations

  • Swap the pork sausages for chicken sausages for a milder tasting version.
  • For a vegetarian version, replace the sausages with plant based sausages and cook the peppers the same way.
  • For kids, blend part of the pepper sauce before serving, it turns milder and easier for them to accept.

What to serve it with

  • A sharply dressed green salad
  • White rice to soak up the sauce
  • A glass of sparkling lemon water

Storage

Store leftovers in a sealed container in the fridge for 2 to 3 days. The dish freezes well, without the bread, for up to 2 months. Reheat gently in a pan, adding a splash of water if the sauce has thickened.
