The salmon cooks right in the oven until just barely pink in the center, and the gremolata wakes everything up with its raw garlic, lemon and chopped parsley. This Italian mix needs no cooking at all, you just make it right before serving to keep its freshness intact. The roasted potatoes on the side bring the crunch the dish would otherwise miss.

This is the kind of dish that saves a weeknight without feeling like a shortcut dinner. Kids eat the salmon and potatoes without complaint, while anyone who likes bolder flavors can spoon on extra gremolata themselves. You can just as easily serve it to guests, since it comes together fast but still looks like you made an effort.

The step by step recipe

  1. Cut the potatoes into wedges, toss them with 2 tbsp of olive oil, the thyme, salt and pepper, and spread them out on a baking sheet.

Leave the skin on, it turns crisp, and spread the pieces out so they brown properly.

  2. Roast the potatoes at 210°C and flip them halfway through. 30 min

Preheat the baking sheet empty, the potatoes stick less when they hit a hot surface.

  3. Make the gremolata by mixing the chopped parsley, very finely chopped garlic and the zest of two lemons.

Zest the lemon before juicing it, it's much easier that way.

  4. Add the salmon fillets to the baking sheet, season and drizzle with a little oil, then let it cook. 10 min

The salmon is done when it flakes apart while staying pink at the center.

  5. Top the fillets with gremolata and a squeeze of lemon juice before serving.

A bit of gremolata on the hot potatoes makes them even better.

Our tips to get it right

  • Take the salmon out of the fridge about fifteen minutes before roasting, it cooks more evenly when it's not ice cold.
  • Cut the potatoes into even wedges so they all finish cooking at the same time.
  • Chop the garlic very finely for the gremolata, a chunky piece overpowers the lemon and parsley.

The variations

  • Swap the salmon for cod or trout, adjusting the cooking time since thinner fillets cook faster.
  • For a vegetarian version, replace the salmon with slices of eggplant or zucchini roasted alongside the potatoes.
  • For kids in a hurry to eat, serve the gremolata on the side in a small bowl, so everyone adds as much as they want to their fish.

What to serve it with

  • A green salad with lemon dressing
  • A glass of dry white wine
  • Steamed green beans

Storage

Keep leftovers in the fridge in a sealed container for up to 2 days. Cooked salmon prepared this way doesn't freeze well, the texture turns mealy. Reheat gently in the oven or in a skillet over low heat, and always make the gremolata fresh right before serving.
