Salisbury steak with mushroom gravy and mashed potatoes

Salisbury steak is a seasoned ground beef patty flavored with onion and mustard, seared then simmered in a brown mushroom gravy, served with homemade mashed potatoes. For 4 people, it takes 55 minutes and stays easy to make, for about €3.00 per person. The key is searing the patties first, then finishing them gently in the gravy so they stay juicy.

Salisbury steak is like an upgraded burger patty, softer thanks to the breadcrumbs and onion mixed into the meat, more flavorful thanks to the mustard. The brown mushroom gravy, thickened with flour and built on beef broth, coats the meat and gives the whole dish its character. The homemade mashed potatoes, smoothed with warm milk and butter, soak up that gravy and round out the plate without competing with it.

This is a weeknight dish that also works for a lazy Sunday, since everything cooks in the same pan and eats like comfort food with a spoon. Kids recognize the familiar taste of a beef patty, while adults enjoy a mushroom gravy that makes a change from ketchup. Mon Chou suggests it in fall and winter, when warm mashed potatoes hit the spot.

The step by step recipe

  1. Mix the beef with one grated onion, the egg, breadcrumbs, mustard, salt and pepper, then shape into 4 oval patties.

Wet your hands to make shaping easier.

  2. Boil the peeled potatoes in salted water, then mash them with the warm milk and half the butter. 20 min

A potato ricer gives a lighter mash than a blender.

  3. Sear the patties in the rest of the butter on each side, then set them aside and keep warm. 10 min

Don't press them with the spatula, they lose their juices.

  4. In the same pan, cook the second onion and sliced mushrooms, sprinkle with flour and pour in the broth.

Whisk as you pour the broth in to avoid lumps.

  5. Return the patties to the gravy to finish cooking over low heat, then serve with the mashed potatoes. 8 min

The gravy should coat the patties, it thickens further as it cools.

Our tips to get it right

  • Grate the onion instead of chopping it so it melts into the meat without leaving large chunks.
  • Let the patties rest for two minutes out of the pan before returning them to the gravy, they release less juice that way.
  • Pick firm, dry button mushrooms, they release less water so the gravy stays nicely thick.

The variations

  • Swap the ground beef for ground veal for a more tender patty with a milder flavor.
  • For a vegetarian version, use lentil or mushroom based patties instead of beef, along with vegetable broth.
  • For busy weeknights with kids, shape small round patties instead of ovals, they cook faster and are easier to eat.

What to serve it with

  • A crisp green salad with vinaigrette
  • Steamed green beans
  • A glass of sparkling water

Storage

The patties and gravy keep for 2 to 3 days in the refrigerator in a sealed container. You can freeze the cooked patties with their gravy for up to 2 months. Reheat gently in a skillet or saucepan, adding a splash of broth to loosen the gravy.

Questions about this dish

Can you make the patties ahead of time?

Yes, you can shape the patties the day before and keep them covered in the refrigerator. Take them out 15 minutes before cooking so they cook more evenly.

How do you keep the patties from falling apart while cooking?

Mix the meat gently without overworking it, and let the patties rest a few minutes before cooking. The egg and breadcrumbs are enough to bind them if you don't handle them too much.

Can you substitute the breadcrumbs?

You can use crumbled bread or coarsely ground oats instead. The texture stays close and the patties hold together just as well.

Is the mushroom gravy kid friendly?

Yes, it's a mild brown gravy with no heat, which most kids accept easily. If some don't like mushrooms, set aside some strained gravy before adding the mushroom slices.
