Roasted Saint-Marcellin changes texture the moment it comes out of the oven, the rind still holds but the inside turns runny, almost spoonable. Baked potatoes, hot and soft under their skin, soak up that melted cheese like nothing else does. The walnut salad brings the only crunch in the dish, and that contrast is what makes every bite interesting.

This is the kind of dinner to make on a night when you don't want to think too hard or juggle a pile of pots. Kids usually love mashing their potato into the warm cheese, and there's little room for arguments at the table. Mon Chou often suggests it on a weeknight in fall or winter, when a simple hot plate feels better than anything complicated.

The step by step recipe

  1. Wash the potatoes and cook them whole, skin on, in salted water. 25 min

Poke them with a knife, they're ready when the blade slides in easily.

  2. Place the Saint-Marcellin in their pots or on a baking tray, and poke in the sliced garlic.

If the cheese comes in a small clay pot, leave it in there.

  3. Roast the cheeses for a few minutes at 200°C, until the center turns creamy. 8 min

The top should look just puffed, not liquid.

  4. Make the salad with oil, vinegar, crushed walnuts, salt, and pepper.

The walnuts bring the crunch the melted cheese is missing.

  5. Serve the split open potatoes with the warm cheese spooned over.

Mash the potatoes into the cheese, that's the best part.

Our tips to get it right

  • Pick Saint-Marcellin that looks well ripened, slightly puffed on top, it melts better than one that's still firm to the touch.
  • Keep the potatoes warm under a kitchen towel while the cheese finishes roasting, they lose heat fast once drained.
  • Serve right away as soon as the cheese comes out of the oven, the creamy center firms up within minutes.

The variations

  • Swap the Saint-Marcellin for reblochon or camembert if you can't find it, the melting result stays close.
  • For kids who aren't fans of walnuts, just serve the green salad plain, the cheese and potatoes are enough to win them over.
  • To save time, cut the potatoes into chunks instead of cooking them whole, they'll cook in 15 minutes instead of 25.

What to serve it with

  • A glass of dry white wine
  • Crusty bread for dipping
  • Sparkling apple juice for kids

Storage

Cooked potatoes keep for 2 days in the fridge in a sealed container. Roasted Saint-Marcellin doesn't keep, it's best eaten straight from the oven while the center is still creamy. This dish doesn't freeze.

Questions about this dish

Can you roast the Saint-Marcellin directly in its clay pot?

Yes, if the cheese is sold in a small clay pot, you can leave it in there for roasting. It's actually easier to serve by the spoonful afterward without it spreading out.

Can you make the potatoes ahead of time?

You can cook them a few hours ahead and reheat them by steaming or in the oven just before serving. They lose some of their texture if they sit too long at room temperature.

What can replace walnuts if a kid doesn't like them?

Lightly toasted sunflower seeds give a similar crunch without the strong walnut flavor. You can also just leave them out, the salad still works without.

How do you know the Saint-Marcellin is cooked enough?

The top should look slightly puffed and golden, without turning liquid or spilling over the edges. If you poke the center gently, it should stay soft and creamy, never fully runny.

How long does it take to make a roasted Saint-Marcellin with baked potatoes?

Count 40 min in total, prep and cooking included. The recipe is rated “very easy”.
