Season
Spring

This dish marks the return of asparagus season on the plate. The green spears roast in the oven until tender, with the tips turning slightly caramelized, while the new potatoes keep their thin skin and soft, creamy texture. The soft boiled egg is what ties it all together, its yolk runs over the vegetables the moment you cut into it at the table.

It works as a quick weeknight dinner, but it is polished enough to serve to guests on a Sunday afternoon. Parmesan and fresh chives add depth without covering up the taste of the asparagus. Make this as soon as the first bunches of green asparagus show up at the market, in spring.

The step by step recipe

  1. Cook the new potatoes in salted water with their skin on. 18 min

Poke them with a knife, they should be tender but not falling apart.

  2. Arrange the asparagus on a baking sheet, drizzle with oil, season with salt and pepper, and roast at 200°C. 12 min

Roll them on the sheet halfway through for even coloring.

  3. Drop the eggs into boiling water to soft boil them, then cool them down. 6 min

Start the timer once the water returns to a boil.

  4. Lightly crush the potatoes with a fork, with a drizzle of oil and the lemon juice.

Keep the skin on, it adds flavor.

  5. Plate the potatoes, asparagus and peeled eggs, then sprinkle with parmesan and chives.

Cut the egg in half at the table, the yolk runs over the vegetables.

Our tips to get it right

  • Pick asparagus spears of medium, even thickness, they cook more evenly than a mix of thick and thin ones on the same tray.
  • Salt the potato cooking water generously, it is the only chance they get to absorb flavor all the way through.
  • Start boiling the water for the eggs while the asparagus roasts, everything comes together at the same time without waiting.

The variations

  • Swap the parmesan for pecorino or grated comté if you don't have any on hand.
  • Add a crumpled slice of prosciutto on top for a richer, non vegetarian version.
  • For a quicker version, replace the soft boiled egg with a store bought poached egg or a fried egg cooked for 3 minutes.

What to serve it with

  • A slice of grilled country bread
  • A green salad with lemon
  • A glass of dry white wine

Storage

The cooked vegetables keep for 2 days in the refrigerator in a sealed container, but make the soft boiled eggs just before serving. Reheat the asparagus and potatoes in a skillet or oven for a few minutes, this dish does not freeze well because of the eggs and potatoes.

Questions about this dish

How do you get a perfect soft boiled egg every time?

Drop the egg into water that is already boiling and time it for 6 minutes starting once the boil returns. Cool it under cold water for a few seconds right after to stop the cooking before peeling.

Can you make this dish ahead of time?

You can cook the potatoes and roast the asparagus ahead and keep them in the refrigerator. Cook the soft boiled eggs at the last minute, since they lose their runny texture if they sit too long.

How do you pick good green asparagus?

Look for firm, bright green spears with tight, undried tips. The base should snap cleanly rather than bend when you flex it with your fingers.

Can you use regular potatoes instead of new potatoes?

Small baby potatoes work well as a substitute, since they have a similar size and texture. Avoid large, starchy potatoes, which don't suit this dish as well.

How long does it take to make roasted asparagus with soft boiled eggs and new potatoes?

Count 40 min in total, prep and cooking included. The recipe is rated “easy”.
