A well seared roast beef, pink in the middle, with golden potatoes that roast in the same pan and soak up some of the meat's juices, this is the kind of dish that fills the whole house with a good smell as soon as it comes out of the oven. The garlic in its skin and the thyme season the potatoes gently, without ever overpowering the beef.

This is the classic Sunday dinner, the one you set in the middle of the table so everyone can help themselves to the doneness they like. Kids go for the crispy potatoes, adults enjoy the pan jus spooned over everything. It's easy to pull off even if you don't roast meat often, as long as you respect the resting time.

The ingredients

4 people

Butcher

  • Roast beef 800 g

Fruits and vegetables

  • Potatoes 1 kg
  • Garlic 4 cloves
  • Thyme 3 sprigs

Pantry

  • Olive oiloften in the pantry 4 tbsp
  • Beef brothoften in the pantry 15 ml
  • Saltoften in the pantry 1 pinch
  • Pepperoften in the pantry 1 pinch

Dairy

  • Butter 30 g

The step by step recipe

  1. Take the roast out of the fridge thirty minutes before cooking and heat the oven to 220°C. 30 min

Meat at room temperature cooks much more evenly.

  2. Cut the potatoes into wedges, toss them with oil, unpeeled garlic cloves and thyme, then put them in the oven.

Parboiling the potatoes for five minutes makes them crispier.

  3. Sear the roast on all sides in a pan with the butter, then season with salt and pepper. 8 min

Salt after searing so the surface doesn't dry out.

  4. Set the roast on top of the potatoes and put it in the oven for a pink finish. 30 min

Allow about 12 minutes per 500g for a pink roast.

  5. Set the roast aside under foil, deglaze the pan with the broth, and serve this jus on the side. 10 min

A splash of broth in the pan picks up all the browned bits from cooking.

Our tips to get it right

  • Pick a roast from the butcher that's fairly even in thickness, it will cook more evenly than an uneven cut.
  • Use a meat thermometer if you have one, 52 to 54°C at the center gives you a reliably pink roast every time.
  • Slice the roast into thin pieces right before serving, not earlier, so it keeps all its juice on the plate.

The variations

  • Swap the beef for a pork roast, adjusting the cooking time since it needs to cook a bit longer all the way through.
  • For a vegetarian version, replace the roast with a whole large cauliflower roasted alongside the same potatoes, garlic and thyme.
  • For a quicker weeknight meal, ask your butcher for a thinner roast or cut the piece in half to shorten the oven time.

What to serve it with

  • A green salad with vinaigrette
  • Steamed green beans
  • A glass of sparkling grape juice

Storage

The cooked roast keeps for 2 to 3 days in the fridge in a sealed container, ideally with the potatoes stored separately from the meat. It freezes well sliced, best eaten within a month. Reheat gently in a pan or oven so the meat doesn't dry out.

Questions about this dish

How do I know when my roast beef is done?

Allow about 12 minutes per 500g for a pink roast at 220°C. If you have a thermometer, aim for 52 to 54°C at the center before resting it under foil.

Can I prep this dish ahead of time?

You can cut the potatoes and peel the garlic a few hours ahead. Sear and roast the beef at the last moment so it stays juicy.

Why sear the roast before putting it in the oven?

Searing in a pan creates a golden crust that adds flavor and locks in the meat's juices. Skip this step and the roast will look paler and taste less rich.
