Red bean steaks with oven potatoes
Red bean steaks with oven potatoes are a vegetarian dish for 4 people, ready in 50 minutes, easy to make, for €1.50 per person. The key is mashing the beans coarsely and drying the potatoes well before roasting so they crisp up instead of turning soft.
The kids will think they're eating burger patties, when really they're made of red beans, served with good oven potatoes.

These steaks have the texture of a classic burger patty, golden and slightly crisp outside, soft inside, with small whole pieces of beans giving each bite some bite. The smoked paprika on the potatoes adds a faintly grilled note that recalls barbecue flavor, with no meat anywhere on the plate.
This is the kind of dish to slot into a weeknight when you want something different without spending an hour at the stove, or to serve to kids without mentioning the red beans. Mon Chou promises they will mistake them for regular burger patties.

The step by step recipe
-
Cut the potatoes into large wedges, toss them with 2 tablespoons of oil, salt, and paprika, then roast at 210 °C. 30 min
Spread them in a single layer, otherwise they steam instead of browning.
-
Mash the rinsed red beans with a fork, keeping a few chunky pieces.
Pat them dry with a towel first, excess water makes the steaks mushy.
-
Mix the bean mash with the chopped onion and garlic, the egg, the oats, salt, and pepper.
Let it rest five minutes, the oats swell and the mixture holds together on its own.
-
Shape into four steaks with wet hands.
Flatten them to about two centimeters thick so they cook through without breaking.
-
Brown the steaks in a skillet with the remaining oil, then flip them gently. 8 min
Only flip once the crust has formed, they will release easily on their own.
-
Serve the steaks with the oven potatoes and a bit of ketchup.
Run the potatoes under the broiler for a few seconds to make them extra crispy.
Our tips to get it right
- Rinse the red beans well before mashing them, the canning liquid has a metallic taste that otherwise comes through in the steaks.
- Start with a hot skillet, the steaks stick less and form their golden crust faster.
- If the mixture feels too soft to shape, add another spoonful of oats rather than overworking it.
The variations
- Swap the red beans for white beans or cooked lentils to change the taste and texture of the steaks.
- For an egg free version, replace the egg with a tablespoon of tomato paste or cornstarch mixed with a little water.
- For kids in a hurry, shape small patties instead of full steaks, they cook faster and are easy to eat with fingers.
What to serve it with
- A green salad with a sharp vinaigrette
- A garlic yogurt sauce
- Sparkling water with lemon
Storage
Cooked steaks keep for 2 to 3 days in the fridge in a sealed container. They freeze well raw, and you can cook them straight from frozen with a slightly longer cooking time. Reheat the steaks in a skillet rather than the microwave to keep their crust.
Questions about this dish
Can you make the steaks ahead of time?
Yes, you can shape the steaks the day before and keep them covered in the fridge. Cook them just before serving so they stay nicely golden in the skillet.

You can use regular breadcrumbs in the same amount, they work the same binding role. The texture will be slightly less soft than with oats.
How do you keep the steaks from falling apart while cooking?
Let the mixture rest five minutes before shaping the steaks, and only flip them once a crust has formed. Wet hands when shaping also help prevent sticking and cracking.
