Rakott krumpli stacks tender potato rounds, sliced hard boiled eggs and smoked sausage, all held together by cream that melts gently as it bakes. The paprika dusted on top adds a smoky hint of color, and the buttered breadcrumbs form a crisp crust that contrasts with the soft layers underneath.
It's a winter dish that fills you up without any fancy technique, great for a weeknight once the potatoes are cooked, or for a lazy Sunday the whole family can share. Kids tend to like the simple texture of the bake and the mild sausage flavor, and the green salad on the side lightens the plate.

The step by step recipe
-
Cook the potatoes whole in salted water, and the eggs in another pot until hard boiled, then peel and slice both into rounds. 25 min
Drop the eggs into cold water right after cooking, the shell comes off easily.
-
Slice the sausage into thin rounds and butter a baking dish.
Remove the sausage casing if it's thick.
-
Layer potatoes at the bottom of the dish, season with salt and pepper, then add eggs, sausage and spoonfuls of cream, and repeat, finishing with potatoes.
Go light on the salt between layers, the smoked sausage is already salty.
-
Top with cream, sprinkle with breadcrumbs and paprika, dot with butter, and bake at 190 degrees. 30 min
The butter dots brown the breadcrumbs, don't skip them.
-
Serve the bake hot with the dressed green salad.
A well dressed salad balances the richness of the dish.
Our tips to get it right
- Slice the potatoes and eggs to the same thickness, about half a centimeter, so the bake cooks evenly and holds together when cut.
- Let the bake rest for 5 minutes after it comes out of the oven, the layers settle and the portions cut more cleanly.
- Pick a good quality smoked sausage, it carries most of the flavor in this dish, a bland sausage makes for a bland bake.
The variations
- Swap the smoked sausage for diced smoked bacon for a lighter meat version that's just as flavorful.
- For a vegetarian version, skip the sausage and add a layer of sautéed mushrooms between the potatoes and eggs.
- To go faster with kids, use store bought pre cooked hard boiled eggs and jump straight to the second step.
What to serve it with
- Dressed green salad
- Pickles or pickled vegetables
- Fresh bread for scooping
Storage
The bake keeps 2 to 3 days in the fridge in a sealed container. It freezes well once cooled, in individual portions. Reheat in the oven or microwave until hot all the way through.
Questions about this dish
Can you make rakott krumpli ahead of time?
Yes, you can assemble the bake the day before and keep it in the fridge without the final layer of cream and breadcrumbs. Add that layer right before baking so it browns properly.
What sausage works best for this bake?
A smoked sausage like kielbasa or a smoked pork sausage works well. The key is that it's already smoked, to bring that signature Hungarian flavor.
Does rakott krumpli freeze well?
Yes, once cooked and cooled, it freezes easily in portions. Thaw in the fridge, then reheat in the oven to bring back a good texture.
Can you replace the heavy sour cream?
