They generally like it

Raclette is melted cheese slowly running over a hot potato, that small golden crust forming at the edges of the little pan, and a mix of salty and gooey you won't find anywhere else. With four different cold cuts, prosciutto, ham, rosette salami and coppa, everyone builds their own plate just the way they like it, somewhere between melting fat and crunchy pickles.

It's the ultimate winter meal, the one you serve on a Sunday evening with family or when friends show up and you haven't had time to cook anything elaborate. Kids love melting their own cheese in their little pan, and nobody stays stuck at the stove, since everything happens right at the table, together.

The step by step recipe

  1. Wash the potatoes and cook them whole, skin on, in salted water. 25 min

Keep them warm in their cooking water, they won't cool down.

  2. Take the cheese out of the fridge fifteen minutes ahead and slice it if needed.

Room temperature cheese melts faster and more evenly.

  3. Arrange the cold cuts, pickles and pearl onions in small bowls.

Don't overcrowd them, everyone serves themselves as they like.

  4. Turn on the raclette machine and melt the cheese in the little pans.

Let the cheese brown until golden at the edges.

  5. Serve with the peeled potatoes at the table and the green salad.

A touch of freshly ground pepper brings out the cheese.

Our tips to get it right

  • Pick potatoes of similar size and a firm variety, they cook evenly and hold up well once hot on the table.
  • Don't overload the little pans with cheese, a thin layer melts more evenly and browns better at the edges.
  • Use shallow bowls rather than flat plates, melted cheese slides off potatoes less quickly that way.

The variations

  • Swap one of the cold cuts for smoked bacon or crispy lardons for a different texture.
  • For a vegetarian version, skip the cold cuts and add sauteed mushrooms and roasted peppers to the little pans.
  • For hungry kids who can't wait, serve a few plain potatoes first while the machine heats up.

What to serve it with

  • A well dressed green salad
  • A white wine from Savoie
  • Fresh country bread

Storage

Cheese and cold cuts keep for 2 to 3 days in the refrigerator, each in a separate closed container. Cooked potatoes also keep for 2 days, reheat them in a skillet or in the oven. Raclette doesn't freeze well, melted cheese loses its texture once thawed.

Questions about this dish

Can you prepare raclette ahead of time?

You can cook the potatoes and slice the cheese and cold cuts a few hours ahead. Keep everything in the refrigerator and take the cheese out fifteen minutes before serving.

What cheese works if I can't find raclette cheese?

A piece of reblochon or a fruity tomme melts just as well. Avoid overly dry cheeses, they won't melt smoothly in the little pans.

How do you keep the potatoes from going cold during the meal?

Leave them in their hot cooking water until the last moment, then serve them a few at a time. You can also keep them in a covered dish near the machine.

Can you freeze raclette leftovers?

Already melted cheese freezes poorly, it turns grainy once thawed. It's better to freeze any unused raw cheese and cold cuts separately, before they ever hit the little pan.

How long does it take to make a raclette with cold cuts?

Count 40 min in total, prep and cooking included. The recipe is rated “very easy”.

How many calories are in a raclette with cold cuts?
