These patties are crispy on the outside and soft on the inside, thanks to the quinoa and the light crunch of the grated vegetables. Cumin adds warmth without covering the taste of the carrots and zucchini. You eat them with your hands, warm or at room temperature, dipped in a bit of yogurt if you like.

This is the kind of dish Mon Chou suggests for a meat free weeknight, when you want to cook fast with what's already in your kitchen. Kids love their shape, and adults appreciate how light the meal feels. They also work well for a relaxed Sunday, as a main course with just the salad on the side.

The step by step recipe

  1. Cook the rinsed quinoa in salted water, then drain well and let it cool. 12 min

Spread it on a plate so it cools and dries faster.

  2. Grate the carrots and zucchini, press them in a kitchen towel, and chop the onion.

Press hard, the water from the zucchini softens the patties.

  3. Mix the quinoa, vegetables, eggs, breadcrumbs, cumin, salt, and pepper.

If the mixture is sticky, add a spoonful of breadcrumbs.

  4. Shape patties with wet hands and brown them in hot oil. 12 min

Flip them only once, using a wide spatula.

  5. Dress the salad with a spoonful of oil, the vinegar, and salt, and serve with the patties.

A lemony plain yogurt on the side is a nice touch.

Our tips to get it right

  • Let the quinoa cool completely before mixing it with the vegetables, otherwise the mixture gets too wet and the patties fall apart while cooking.
  • Use a wide pan and don't crowd the patties, they need space to brown evenly.
  • If you're short on time to press the vegetables by hand, a potato masher or the back of a spoon in a strainer works just as well.

The variations

  • Swap the zucchini for coarsely grated cauliflower for a different texture.
  • For an egg free version, bind the mixture with two tablespoons of chickpea puree instead of the eggs.
  • For a faster, kid friendly version, shape smaller patties and cook them five minutes per side, they cook quicker and are easy to eat as bites.

What to serve it with

  • Lemony plain yogurt
  • Herbed cottage cheese sauce
  • Warm pita bread

Storage

The patties keep two to three days in the fridge in a sealed container. They freeze well raw or cooked, and you can reheat them straight from frozen in a pan or oven for a few minutes.
