Under the golden crunch from the waffle iron hides a soft potato center, flavored with gruyere and chives. The fried egg on top spills into the waffle's grooves as soon as you cut into it, and the tangy salad brings the freshness that balances the whole plate. It's comforting without feeling heavy, a nice change from the usual gratin or fries.

This is the kind of weeknight dinner that pulls the waffle iron out of the cupboard, because everything comes together in 40 minutes with pantry staples. Kids love cracking the egg open on their waffle, and adults like that you can swap the cheese or add ham for bigger appetites. Mon Chou likes this dish because it turns leftover mashed potatoes into something crispy.

The step by step recipe

  1. Peel and grate the potatoes, then squeeze them firmly in a clean towel to remove as much water as possible.

If you leave the water in, the waffles stick to the iron and stay soft.

  2. Mix the grated potatoes with 2 eggs, the flour, gruyere, chopped chives, melted butter, salt, and pepper.

Add the melted butter warm, not boiling hot, so it doesn't cook the eggs.

  3. Oil the waffle iron, spoon two large scoops of batter per waffle, and cook until golden brown. 8 min

Don't lift the lid before 5 minutes, the waffle should release on its own.

  4. Keep the waffles warm on a rack in the oven at 100°C, then fry the 4 eggs in olive oil.

On a rack they stay crispy, stacked together they go soft.

  5. Toss the salad with the vinegar, oil, salt, and pepper, and place a fried egg on each plate of waffles.

Dress the salad at the last minute, otherwise it wilts.

Our tips to get it right

  • Use a starchy potato variety like russet, it holds the batter together better and crisps up more than a waxy potato.
  • Preheat the waffle iron fully before the first batch, the first waffles always come out less crispy if the iron isn't hot enough.
  • If you don't own a waffle iron, cook the same batter as pan fried patties, the result is close even if the crunch is less pronounced.

The variations

  • Swap the gruyere for comte or Swiss cheese, the flavor shifts slightly but the texture stays the same.
  • For a version without the fried egg, top the waffle with a slice of smoked salmon or crispy bacon bits instead.
  • To go faster with hungry kids, shape smaller waffles that cook in less time and are easy to eat with your hands.

What to serve it with

  • A yogurt and chive dip
  • Thinly sliced ham
  • A glass of sparkling apple juice

Storage

The batter keeps for 1 day in the fridge in a sealed container, but cooked waffles taste best eaten right away. If you have leftover cooked waffles, reheat them in the oven or toaster to bring back the crunch, and leave them uncovered so they don't go soft.

Questions about this dish

Can you make the batter ahead of time?

Yes, you can make the batter up to a day ahead and keep it in the fridge in a sealed container. Stir it well before using, since the potatoes release water that can settle at the bottom.

Can you use a different cheese instead of gruyere?

Yes, comte, Swiss cheese, or a mild cheddar all work well in place of gruyere. Pick a cheese that melts easily so the batter still holds together.

Can you freeze potato waffles?

Yes, cooked and cooled waffles freeze well in an airtight bag for up to a month. Reheat them straight from frozen in the oven or toaster so they stay crispy.

Why is squeezing the grated potatoes so important?

Grated potatoes release a lot of water as they sit, and that water keeps the batter from browning properly in the waffle iron. Squeezing them dry in a towel gives you crispy waffles instead of soft, pale ones.
