Pork tenderloin cooked slowly in the oven stays tender and juicy, and the prune sauce gives it a sweet savory edge you don't get with classic gravies. Softened shallots and reduced cream wrap the meat in a glossy sauce, while the mashed potatoes, smoothed with warm milk, soak up every bit of it.
This is a relaxed Sunday family dinner, the kind you can serve without stress since the oven does most of the work while you make the mash. Kids tend to love the soft sweetness of the prunes in the sauce, and adults appreciate how simple a well cooked pork tenderloin can be. It's a good pick for fall or winter, when you want something warming without a complicated evening.

Our tips to get it right
- Pick two tenderloins of similar size so they cook evenly in the oven.
- Check doneness with a knife in the center, the juices should run pale pink, not red and not fully clear.
- Save some of the prune soaking liquid, it can replace part of the white wine if you want a milder, sweeter sauce.
The variations
- Swap the heavy cream for a plant based cream to make it dairy free, the sauce stays just as silky.
- For more depth, stir a pinch of allspice into the sauce along with the prunes.
- For kids in a hurry, cut the meat into small pieces before spooning on the sauce, it cools faster and is easier to eat.
What to serve it with
- A sharply dressed green salad
- Steamed green beans
- A glass of warm grape juice
Storage
The pork and its sauce keep for 2 to 3 days in the fridge in a sealed container. The mashed potatoes also keep for about 2 days, though they taste best fresh. Reheat gently in a pan or microwave, adding a splash of milk to loosen the mash.
