Pineapple pork roast with rice
Pineapple pork roast with rice is a family dish for 4 people, ready in 1 hour 15 minutes, rated easy, at about €3.10 per person. The roast braises with onion, honey and ginger before the pineapple slices go on top for the final stretch. This pineapple pork roast smells like vacation the moment it comes out of the oven. The meat cooks slowly with honey, ginger and pineapple juice, which keeps it moist and fragrant, while the slices on top turn a deep golden color with a light caramelized edge. White rice soaks up the pan juices and rounds out the plate without competing with it.
It works just as well on a weeknight as on a Sunday, since it asks for very little hands-on time and lets the oven do most of the job while you handle everything else. At Mon Chou, we like it for family dinners, because the sweetness of the pineapple wins kids over and adults rediscover a classic that doesn't show up on the table often enough.

The step by step recipe
-
Preheat the oven to 180°C. Season the roast with salt and pepper, then brown it on all sides in a pot with the oil. 10 min
A cast iron pot holds heat and browns better than any regular pan.
-
Add the sliced onion, honey, ginger and half of the pineapple can juice, then put it in the oven. 35 min
Baste the roast with the pan juices every ten minutes to keep the meat moist.
-
Arrange the pineapple slices around and on top of the roast, then continue cooking. 30 min
If the pineapple browns too fast, cover it with foil.
-
Meanwhile, cook the rice in salted boiling water, then drain it. 11 min
Rinse it before cooking so it doesn't stick together.
-
Let the roast rest for five minutes, slice it and spoon the cooking juices and pineapple over the top. 5 min
Pour off the juices and simmer them for ten minutes in a saucepan for a thicker, syrupy glaze.
Our tips to get it right
- Pick a pork roast from the shoulder rather than the tenderloin, it holds up better over the long cooking time without drying out.
- Save the leftover pineapple juice from the can, it comes in handy if the sauce reduces too quickly and needs loosening.
- Check doneness with the tip of a knife, the juices should run clear with no trace of pink.
The variations
- Swap the pork for chicken breasts, cutting the total cooking time down to about 40 minutes.
- For a vegetarian version, replace the roast with firm tofu slices seared and simmered in the same honey, ginger and pineapple mixture.
- For kids in a hurry, serve the pineapple diced small and stirred into the rice instead of in slices, it's quicker to eat by the spoonful.
What to serve it with
- A tangy green salad
- Steamed green beans
- Homemade unsweetened iced tea
Storage
The roast keeps for 2 to 3 days in the fridge in a sealed container, sliced and covered with its juices. It freezes well for up to 2 months, sliced, in a bag or airtight container. Reheat it gently in a skillet or oven with a splash of the juice so it doesn't dry out.
