Parsley ham with warm potato salad

Parsley ham with warm potato salad is a classic cold dish from Burgundy, served here in a simple version, for 4 people, in 30 minutes, very easy to make, for about €3.00 per person. The key to success is pouring the vinaigrette over the potatoes while they're still warm, so they soak up all the flavor.

Tonight it's all fresh, with parsley ham just like in Dijon, and a warm, well seasoned potato salad.

Parsley ham has a bold, slightly tangy taste from the white wine marinade it sits in, with flecks of parsley that add a bit of crunch. Alongside it, the potato salad stays soft and warm, coated in a mustard vinaigrette that perks everything up without covering the taste of the ham.

This is the kind of dish you make for a light spring or summer dinner, an easy Sunday lunch, or a meal prepped ahead for a picnic. Kids generally go for the hard boiled eggs and pickles, and you can always cut back on the mustard if you're cooking for sensitive taste buds.

The step by step recipe

  1. Cook the potatoes in their skins in salted water. 25 min

Pierce them with the tip of a knife, it should slide in with no resistance.

  2. Hard boil the eggs in a small saucepan, then peel them under cold water. 10 min

Under cold water, the shell comes off like a dream.

  3. Make the vinaigrette by whisking the mustard, vinegar, salt, pepper, then the oil, and add the chopped shallots.

Let the shallots sit in the vinegar for a few minutes to soften their bite.

  4. Peel the potatoes while still warm, slice them into rounds, and drizzle with the vinaigrette right away.

Warm, they soak up the dressing, cold, they push it away.

  5. Add the parsley, sliced pickles, and quartered eggs, then serve with the slices of parsley ham.

Take the parsley ham out of the fridge 10 minutes before serving, its flavors wake up.

Our tips to get it right

  • Pick waxy potatoes, they hold their shape in slices and won't turn mushy in the salad.
  • Whisk the vinaigrette well before adding it, the oil and vinegar need to emulsify so it coats every slice evenly.
  • Taste the vinaigrette before mixing it in, since parsley ham is already salty, you can go lighter on salt for the salad.

The variations

  • Swap the parsley ham for thick sliced cooked ham if you can't find it at your butcher.
  • For a vegetarian version, skip the ham and add extra hard boiled eggs plus a few cubes of fresh cheese.
  • To speed things up for kids, use pre-cooked vacuum packed potatoes and jump straight to the vinaigrette step.

What to serve it with

  • A bit of country bread
  • A green salad with vinaigrette
  • A glass of dry white wine

Storage

The potato salad keeps for 2 days in the refrigerator in a sealed container. Parsley ham keeps for about 3 to 4 days, check with your butcher for exact timing. This dish doesn't freeze well, neither the ham nor the salad holds up to freezing.

Questions about this dish

Can you make this dish ahead of time?

Yes, you can cook the potatoes and eggs the day before. Make the vinaigrette at the last minute and toss everything together right before serving to keep that warm, tender texture.

Can you swap the white wine vinegar?

You can use apple cider vinegar, which is a bit milder, or white balsamic vinegar. Skip regular balsamic vinegar, it's too dark and sweet for this vinaigrette.

Should you peel the potatoes before or after cooking?

Always after. Cooked in their skins, potatoes keep their texture and soak up less water. Peel them while still warm, the skin slides off easily at that point.
