Paprikás krumpli is a dish that warms you up without any fuss. The potatoes simmer slowly in a paprika scented broth until they turn tender, and some of them break down a bit, thickening the sauce on their own. Green bell pepper and tomatoes add a touch of acidity that balances the sweetness of the paprika and softened onion.
It's the kind of weeknight dish you want when you need something warm and simple, with bread to soak up every last bit of sauce. Kids tend to like it because sweet paprika isn't spicy at all, while adults can stir in a spoonful of sour cream for a richer version. It also makes great leftovers, the flavors only get better the next day.

The step by step recipe
-
Peel the potatoes and cut them into roughly two centimeter cubes.
Keep them in cold water while you work, they won't turn brown.
-
Cook the sliced onions in the oil over low heat until nicely golden, then add the garlic. 10 min
Be patient, well softened onions give the sauce all its richness.
-
Take the pot off the heat, add the paprika, stir quickly, then return to the heat with the bell pepper and tomatoes cut into pieces. 5 min
Stir right after adding the paprika so it doesn't catch and burn.
-
Add the potatoes, salt, pepper and enough broth to cover, then simmer covered until the potatoes are tender. 25 min
Mash a few cubes against the pot, they'll thicken the sauce on their own.
-
Serve in deep plates with fresh bread.
A spoonful of sour cream on top is a nice bonus for those who want it.
Our tips to get it right
- Pick potatoes that hold their shape reasonably well during cooking, like waxy potatoes, so you still get recognizable chunks in the sauce.
- Use a good quality sweet paprika, it's what gives the dish its color and flavor, a bland paprika will leave you with a dull result.
- If the sauce looks too thin at the end, let it simmer uncovered for a few minutes so it reduces and coats the potatoes properly.
The variations
- Swap the green bell pepper for a red one for a milder flavor and a brighter color.
- Add sliced smoked sausage along with the potatoes for a heartier version.
- For kids, blend a small portion of the sauce before serving for a smoother texture with fewer bell pepper pieces.
What to serve it with
- Fresh country bread for dipping
- A spoonful of sour cream
- A vinegared cucumber salad
Storage
Paprikás krumpli keeps for 2 to 3 days in the fridge in a sealed container. It freezes well for up to 2 months, reheat gently in a pot, adding a splash of water or broth if needed.
Questions about this dish
Can you make paprikás krumpli ahead of time?
Yes, it's actually a dish that benefits from being made the day before. The flavors have time to blend and the sauce thickens slightly as it rests.
What kind of paprika should you use?
A sweet ground paprika works best, it gives the dish its signature color and flavor without any heat. Avoid smoked paprika, it would change the taste entirely.
Can you replace the vegetable broth?
You can use water with a bit of salt if you don't have broth on hand, the flavor will just be slightly less rounded. Homemade vegetable broth adds more depth.
Why do some potatoes break apart in the sauce?
That's normal and actually intended, mashing a few chunks against the pot near the end of cooking thickens the sauce naturally. There's no need to add flour or cream to bind it.
