Papadzules play on a contrast you won't find anywhere else, the creamy mildness of toasted ground pumpkin seeds against the sharp kick of a chili spiked tomato sauce. The crushed hard boiled egg gives the filling some body, while the tortilla stays tender from soaking in warm sauce. It's a dish that surprises as much with its texture as with its flavor.
This is a dish for an unhurried weekend, when you have time to make both sauces and roll the tortillas one by one. Kids generally like the mellow green sauce and the simplicity of the egg, you can just keep the chili on the side for sensitive palates. Mon Chou walks you through each step so you don't get lost between the two sauces.

The step by step recipe
-
Hard boil the eggs, then peel and coarsely crush them. 10 min
Plunge them into cold water right after cooking, they peel much more easily.
-
Toast the pumpkin seeds dry in a skillet until they puff up, then blend them with the cilantro and the broth. 5 min
Watch them closely, they pop and burn quickly.
-
Cook the onion and garlic in the oil, add the tomatoes and chili, let it reduce, then blend into a tomato sauce. 15 min
Pass the sauce through a sieve if you like a smooth texture.
-
Dip each tortilla in the warm green sauce, fill it with egg, and roll it up.
Work one tortilla at a time so they don't tear.
-
Arrange the rolls on plates, top with green sauce, then with tomato sauce.
The red and green sauces echo the colors of the Mexican flag.
Our tips to get it right
- Crush the hard boiled eggs coarsely, not into a paste, so each roll keeps a bit of texture.
- Make both sauces ahead and keep them warm separately, assembly then takes just a few minutes.
- Taste the tomato sauce before serving and adjust the chili, its heat varies a lot from one batch to another.
The variations
- Swap the pumpkin seeds for shelled sunflower seeds if you can't find them, the result stays close to the original.
- For a spicier version, add a finely chopped fresh chili to the tomato sauce along with the ground chili.
- To save time, make the tomato sauce the day before, leaving just the green sauce and the assembly for the day of.
What to serve it with
- Plain white rice
- Sliced avocado
- Cold lime water
Storage
Both sauces keep 2 to 3 days in the fridge in separate sealed containers. They freeze well for up to 2 months, thaw in the fridge then reheat gently in a saucepan. Assemble the tortillas just before serving, they don't keep once rolled.
