Mouclade is what you get when classic moules marinière puts on its Sunday best. Mild curry brings a quiet warmth, saffron adds a golden color and a delicate scent, and cream ties everything together without burying the briny taste of the mussels. The plain rice underneath soaks up that sauce and ends up tasting almost as good as the mussels themselves.

It's a great dish for a fall or winter evening, when bouchot mussels are in season and plump. Ready in 40 minutes and easy to pull off, it works for a weeknight dinner or a relaxed Sunday meal among adults, since the curry and saffron call for palates already used to bold flavors.

The step by step recipe

  1. Scrub and rinse the mussels under cold water, discard any that stay open and pull off the small beards.

A mussel that doesn't close when you tap it should be tossed.

  2. Cook the chopped shallots in the butter, add the curry powder and saffron, then the white wine and mussels, cover and cook over high heat, shaking the pot now and then. 6 min

Pull the mussels out as soon as they open, otherwise they turn rubbery.

  3. Cook the rice in a large pot of salted water, then drain it. 11 min

Keep the cooking water nearby for a moment, a little steam keeps it moist.

  4. Strain the cooking liquid and reduce it by half, then off the heat whisk in the cream and egg yolks. 5 min

Stay off the heat to thicken it, otherwise the yolks cook into little lumps.

  5. Put the mussels back into the sauce, add pepper and serve over the rice with chopped parsley.

A tiny extra pinch of curry at the end adds depth without masking the mussels.

Our tips to get it right

  • Pick bouchot mussels that are tightly closed and feel heavy, they're full of seawater and give a more flavorful broth.
  • Hold off on salting the sauce until you've tasted it, the mussel liquid is already naturally salty.
  • Serve the mouclade as soon as it's ready, the creamy sauce loses its texture if it sits too long over heat.

The variations

  • Swap the mild curry for a hotter one if you like a bit of a kick in your dinner.
  • This recipe doesn't lend itself to a vegetarian version, the shellfish is central to the dish.
  • To save time, use a microwave rice pouch and heat it while you cook the mussels.

What to serve it with

  • Crusty bread for dipping
  • A simple green salad to start
  • A glass of dry white wine

Storage

Mussels keep for 1 day in the fridge in a sealed container, no longer, since they turn fragile once cooked. Avoid freezing, the cream and egg yolk sauce separates when thawed. Reheat gently over low heat while stirring, without letting it boil.

Questions about this dish

How do you know when the mussels are cooked?

Mussels are done as soon as they open, usually after 5 to 6 minutes over high heat. Any that stay closed after cooking should be thrown away, they aren't safe to eat.

Can you make the sauce ahead of time?

You can chop the shallots and measure out the curry and saffron in advance. But thicken the sauce with cream and egg yolks at the last minute, right before serving.

What kind of curry works best for mouclade?

A classic mild curry powder is all you need, it adds flavor without overpowering the mussels. Skip very hot curries, they'd compete with the saffron.

Why do you thicken the sauce off the heat?

Egg yolk cooks almost instantly in direct heat and turns lumpy if left on the stove. Off the heat, it thickens the sauce gently and keeps a smooth texture.
