Morteau sausage brings a bold smoky flavor that sets this quiche apart from a classic quiche Lorraine, while melted Comté gives the custard a richer, almost creamy pull. The crust, blind baked first, stays crisp under a filling that's soft and lightly spiced with nutmeg. It's a quiche with real character, but nothing complicated about making it.

It's a good choice for a weeknight dinner in fall or winter, when you want something warm and comforting without spending hours in the kitchen. Kids usually love the melted Comté and the familiar quiche format, while adults enjoy the smokiness of the Morteau sausage. Mon Chou serves it simply, with a green salad to round out the meal.

The step by step recipe

  1. Simmer the sausage gently in water, then slice it into rounds. 20 min

    Let it cool before slicing.

  2. Roll out the crust into a tart pan, prick it, and blind bake at 180°C. 10 min

Weigh it down with dried beans so it doesn't puff up.

  3. Layer the sausage rounds and grated Comté over the crust.

Save a little Comté for the top.

  4. Whisk the eggs with the cream, milk, nutmeg, a little salt, and pepper, then pour over the filling.

Go easy on the salt, the sausage and Comté already add plenty.

  5. Bake until the quiche is golden and set, then serve with the salad. 35 min

A knife inserted in the center should come out clean.

Our tips to get it right

  • Pick a Morteau sausage that's fully cooked in gently simmering water rather than a hard boil, so it stays tender and doesn't dry out.
  • Pat the sausage slices dry with paper towel before layering them on the crust, to keep the bottom from getting soggy.
  • Let the quiche rest for five minutes after it comes out of the oven, the filling firms up and the slices hold together better.

The variations

  • Swap the Morteau sausage for Montbéliard sausage or smoked bacon lardons if you can't find it.
  • For a vegetarian version, skip the sausage and add sautéed leeks along with the Comté.
  • For a quicker weeknight version kids will eat fast, use a store bought pre baked crust and skip the blind baking step.

What to serve it with

  • Green salad with vinaigrette
  • A vegetable soup starter
  • A glass of white wine from the Jura

Storage

The quiche keeps 2 to 3 days in the fridge in an airtight container. It freezes well once baked and sliced, for up to 2 months. Reheat it in the oven rather than the microwave so the crust stays crisp.

Questions about this dish

Can I use a different sausage instead of Morteau?

Yes, Montbéliard sausage works well and has a similar smoky flavor. Smoked bacon lardons are a good backup if you have neither on hand.

Do I really need to blind bake the crust?

It's strongly recommended for this quiche, since the filling is fairly liquid. Without blind baking, the bottom can turn soft under the Comté and sausage.

Can I make this quiche ahead of time?

Yes, you can bake it the day before and reheat it in the oven. You can also prep the filling and custard separately the night before, then assemble and bake just before serving.

Do kids usually like this quiche?

Yes, generally, the melted Comté and the familiar quiche format make it an easy sell for younger eaters. If the smokiness is too strong for some, just reduce the amount of sausage.
