The salmon turns a glossy caramel color under the maple glaze, with that sweet and savory mix where the whole grain mustard cuts through the stickiness. Wild rice adds crunch and a deeper flavor than plain white rice, while the green beans stay bright and crisp thanks to a quick uncovered cook.

This is a dish that feels special without asking for extra effort, perfect for a weeknight when you still want something worth looking forward to. Kids usually go straight for the sweet glaze, while adults appreciate the little kick you can stir into the reserved sauce.

The step by step recipe

  1. Cook the wild rice in salted water according to the package instructions, then drain it. 40 min

Wild rice is done when the grains split open slightly.

  2. Mix the maple syrup, mustard, soy sauce and crushed garlic to make the glaze.

Set aside two tablespoons of glaze before it touches the raw fish, it will become the sauce.

  3. Place the fillets on a baking sheet, brush them with the glaze and bake at 200°C. 12 min

Pull the salmon out while the center is still slightly translucent, it will finish cooking off the heat.

  4. Meanwhile, cook the green beans in boiling salted water, then sauté them with the butter. 8 min

Don't cover them while cooking, they'll keep their bright green color.

  5. Coat the salmon with the reserved glaze, and serve it with the wild rice and green beans.

Stir a dash of mustard into the reserved glaze for a sauce that gives the fish a little kick.

Our tips to get it right

  • Pick salmon fillets of the same thickness so they all finish cooking at the same time in the oven.
  • Pat the salmon dry with paper towels before brushing it, the glaze sticks better to dry skin.
  • If your baking sheet isn't nonstick, line it with parchment paper, the maple syrup can catch and burn as it cooks.

The variations

  • Swap the salmon for cod or pollock, cutting the oven time slightly since these fish cook faster.
  • For a vegetarian version, glaze firm tofu slabs or eggplant slices with the same maple mixture.
  • For a quicker kid friendly meal, serve the salmon with plain white rice instead of wild rice, it cooks faster.

What to serve it with

  • A cucumber and sesame salad
  • Iced green tea
  • Edamame as a starter

Storage

Salmon and rice keep for 2 days in the fridge in a sealed container. Cooked salmon doesn't freeze well since the glaze loses its shine, it's best eaten fresh. Reheat gently in the oven or in a skillet over low heat so the fish doesn't dry out.

Questions about this dish

Can you make the maple glaze ahead of time?

Yes, you can make it the day before and keep it in a sealed jar in the fridge. Let it sit at room temperature for a few minutes before brushing it on the salmon.

How do you know when the salmon is done without drying it out?

Pull the fillets out while the center still looks slightly translucent, residual heat finishes the cooking. Overcooked salmon turns dry and loses its tender texture.

Can you use a different rice instead of wild rice?

Basmati or brown rice both work well if you don't have wild rice on hand. Cooking time will vary, so check the package instructions.

Does the soy sauce make the dish too salty?

The amount stays moderate and is balanced by the sweetness of the maple syrup. If you prefer, use a low sodium soy sauce to soften the mix even more.
