Under a golden crust, the Gruyère paste melts into a gooey center laced with kirsch. The bread underneath soaks up milk before nearly vanishing under the cheese, creating a contrast between crisp and melting that surprises with every bite.

This is a cozy dish, perfect for a winter dinner with family or friends when everyone wants something warming. Kids love dipping their fritter into the salad, and frying stays manageable even on a weeknight if you make the cheese paste ahead of time.

The step by step recipe

  1. Mix the Gruyère with the white wine, kirsch, nutmeg, pepper and one egg until you get a thick paste.

The mixture should be sticky but hold together in a ball.

  2. Cut the bread into slices, dip them very briefly in the milk, then spread the cheese paste on top.

Press gently with the back of a spoon so the paste sticks.

  3. Roll in the flour, then coat in the remaining beaten egg.

Wipe off any extra egg so the bread doesn't get soggy.

  4. Fry at 170°C for three minutes on each side, until nicely golden. 10 min

Lower them in gently, the paste shouldn't split open.

  5. Drain on paper towels and serve right away with the green salad and pickles.

Eat them hot, the center should be gooey.

Our tips to get it right

  • Grate the Gruyère yourself instead of buying pre shredded cheese, it melts better and gives a creamier center.
  • Test the oil temperature with a small piece of bread before frying the Malakoffs, it should turn golden in about a minute.
  • Don't crowd the fryer, cook three or four fritters at a time so the oil stays hot enough.

The variations

  • Swap the Gruyère for Emmental or Comté, the flavor will be milder but the texture stays the same.
  • For an alcohol free version, replace the kirsch with a splash of lemon juice and keep the white wine in the paste.
  • For kids, cut the bread slices in half before topping them, the Malakoffs will be smaller and easier to eat.

What to serve it with

  • Green salad with a sharp vinaigrette
  • Crunchy pickles
  • A glass of Swiss white wine

Storage

The cheese paste keeps for two days in the fridge in a sealed container, before frying. Once fried, Malakoffs should be eaten right away, they lose their crispness as they cool and don't freeze well.

Questions about this dish

Can you make the cheese paste ahead of time?

Yes, you can make it the day before and keep it in the fridge in a sealed container. It will actually hold together better in balls the next day.

Can you freeze Malakoffs?

It's not recommended, the cheese paste loses its gooey texture once thawed. It's best to prepare them just before frying.

What bread works if you don't have sandwich bread?

Slightly stale sandwich bread works great, it soaks up the milk without getting soggy. Avoid very fresh bread, which tends to fall apart when fried.

How do you know the oil is at the right temperature?

Drop a small piece of bread into the oil, it should turn golden in about a minute. If the oil is smoking, it's too hot and the Malakoffs will burn before the center melts.
