For 4 people, it takes 85 minutes and medium skill, at about €1.80 per serving. The key to success is spreading the filling in a thin layer, so the pastry stays crisp instead of turning soggy.

Krompiruša is a pie that rolls up into a spiral, like a giant snail shell sitting in the baking dish. Under the golden, crackly phyllo, mashed potatoes mix with soft sweet onions for a filling that's gentle and comforting. The plain yogurt served alongside adds a cool tang that balances the richness, spooned on bite by bite.

It's a great weeknight dinner for fall or winter, when you want something warm and simple to share around the table. Kids usually love the soft filling and the flaky layers of pastry. Rolling the phyllo logs takes a bit of time, but there's nothing tricky about it, it's mostly patience and repeating the same simple motion.

The step by step recipe

  1. Boil the diced potatoes in water, then mash them roughly. Soften the sliced onions in the oil.

The onions should turn soft and sweet, that's what gives the filling its flavor.

  2. Mix the potatoes and onions together, and season generously with salt and pepper.

Season well, the pastry itself is bland.

  3. Lay out a sheet of phyllo, brush it with oil, spread a line of filling along it, and roll it into a log. Repeat with the remaining sheets.

Keep the unused sheets covered with a damp towel.

  4. Coil the logs into a spiral in an oiled baking pan and brush the top with oil.

Coil the logs tightly, the spiral holds together better that way.

  5. Bake at 190°C until the pie is golden brown, then serve with the yogurt. 40 min

Let it cool for 10 minutes before slicing.

Our tips to get it right

  • Mash the potatoes while they're still a little warm, they blend more smoothly with the onions and the filling stays even.
  • Work quickly with the phyllo sheets, they dry out and crack if they sit uncovered too long.
  • If you don't have a round pan, a square or rectangular one works too, just coil the logs in loose S shapes or tight rows.

The variations

  • Swap some of the onions for sliced leeks to make the filling even milder.
  • Crumble some feta into the filling for a sharper, saltier version.
  • For kids, shape small individual rolls instead of one big spiral, they're easier to serve and eat by hand.

What to serve it with

  • Plain yogurt or lightly salted sour cream
  • Fresh cucumber and tomato salad
  • Black tea or chilled sparkling water

Storage

Krompiruša keeps for 2 to 3 days in the fridge in a sealed container. It freezes well, already baked and cut into slices. Reheat slices in the oven rather than the microwave, so the pastry stays crisp instead of going soft.

Questions about this dish

Can I use brick pastry instead of phyllo?

Yes, brick pastry works well and gives an even crispier result. Brush it generously with oil so it doesn't dry out too fast in the oven.

Can I make krompiruša ahead of time?

You can roll the logs and arrange them in the pan the day before, then cover and keep them in the fridge. Bake the next day, adding a few extra minutes since it's going in cold.

How do I keep the filling from making the pastry soggy?

Spread the filling in a thin layer and let the potatoes cool slightly before spreading them on the phyllo. A filling that's too wet or too thick is the main reason the pastry turns soft.

Can I freeze krompiruša before baking?

Yes, you can freeze it already rolled in the pan, unbaked. Bake it straight from the freezer, adding 10 to 15 extra minutes of cooking time.
