Maroilles melts into a golden, runny crust on toasted bread, with that bold, distinctive smell that wakes up your appetite right away. The endive salad brings the contrast you need, with its light bitterness, apple for sweetness and walnuts for crunch. It is a straightforward dish, no fuss, that gets straight to the point.

This is the kind of recipe for a weeknight when you do not want to make things complicated, especially when it is cold outside. It also works for a light Sunday evening after a heavy family lunch, for adults who like strong cheeses. Mon Chou suggests it as soon as endives are in season, through fall and winter.

The step by step recipe

  1. Preheat the oven to 200 °C on the grill setting and lightly toast the bread slices on a baking sheet. 4 min

Flip them halfway through, the top needs to be dry enough to hold the cheese.

  2. Make the dressing by mixing the mustard, vinegar, walnut oil, salt and pepper.

Add the salt to the vinegar first, it will not dissolve once the oil is in.

  3. Slice the endives into rounds, dice the apple and crush the walnuts, then toss everything with the dressing.

Dip the apple cubes in a bit of lemon juice or vinegar so they do not turn brown.

  4. Rub the bread with garlic, cover it with slices of Maroilles and bake until the cheese is runny. 8 min

Cut the Maroilles with a wet knife, it sticks much less.

  5. Serve the toasts piping hot with the salad on the side.

Toss the salad only at the last minute, the endives stay crunchier that way.

Our tips to get it right

  • Pick a Maroilles that feels almost soft to the touch, it will melt better than one that is too young and firm.
  • Use a fairly dense country bread, a soft loaf sags under the weight of the melted cheese.
  • Keep the dressing on the side if you make the salad ahead, it stays crisp until you are ready to serve.

The variations

  • Swap the Maroilles for reblochon or époisses, you still get a runny melt but a slightly milder flavor.
  • For a nut free version, skip the walnuts and add grilled bacon bits on the bread before the cheese.
  • To save time, skip the homemade dressing and use a ready made mustard vinaigrette instead.

What to serve it with

  • A glass of dry cider
  • A vegetable soup starter
  • A hot cup of black tea

Storage

The salad keeps for a day in the fridge in a sealed container, with the dressing kept separate so it does not go soft. The toasts are best eaten right away, melted cheese does not reheat well. If needed, warm them for a few minutes in the oven rather than the microwave.

Questions about this dish

Can you replace Maroilles with another cheese?

Yes, reblochon or époisses both work well and melt just as easily. The flavor will be milder than Maroilles, but the texture stays just as runny.

Can you make the endive salad ahead of time?

You can slice the endives and make the dressing a few hours ahead. Keep the apple cubes in a bit of lemon juice and only toss everything together right before serving to keep the crunch.

How do you stop the apple cubes from browning?

Drop the apple cubes into a little lemon juice or vinegar as soon as you cut them. That is enough to keep them looking fresh while you finish the salad.

Why rub the bread with garlic before topping it?

This step adds a subtle flavor to the bread without the garlic overpowering the Maroilles. It is a simple trick that gives the toast more character.
