Honey roasted carrots with bulgur and feta
Honey roasted carrots with bulgur and feta is a vegetarian dish for 4 people, ready in 40 minutes, rated very easy, for about €2.00 per person. The trick is adding the honey only in the last 10 minutes of roasting, so it caramelizes instead of burning, paired with a lemony bulgur full of fresh herbs.
Today the carrots are dressed to the nines, roasted in honey and cumin, on a bed of fresh herby bulgur.

The carrots roast until tender inside and lightly caramelized at the edges, carried by the warm scent of cumin. Honey goes on only at the very end, coating the pieces in a thin, glossy layer of sweetness without ever overpowering the natural taste of the vegetable.
Alongside, the lemony herb bulgur adds brightness, and the crumbled feta softens gently against the still warm carrots. It's a simple dish for a weeknight, light enough for a casual lunch between adults, and good enough to serve next to grilled meat on a Sunday.

The step by step recipe
-
Preheat the oven to 210°C, peel the carrots and cut them in half lengthwise.
Keep the carrots a similar size, otherwise some will burn while others stay raw.
-
Toss them with oil, cumin, salt, and pepper on a baking sheet, and roast. 25 min
Spread them out without overlapping, they need to roast, not steam.
-
Drizzle with honey and return to the oven to finish cooking. 10 min
Stir with a spoon to coat them evenly.
-
Meanwhile, pour the same amount of boiling salted water over the bulgur, cover, and let it swell. 10 min
Fluff with a fork at the end, never with a spoon, for light grains.
-
Mix the bulgur with chopped parsley and mint, lemon juice, and a drizzle of oil, then top with the carrots and crumbled feta.
Crumble the feta by hand, it melts better over the warm carrots.
Our tips to get it right
- Cut the carrots in half lengthwise rather than into rounds, they roast more evenly and stay tender in the center.
- If your carrots are thick, quarter the larger ones so everything cooks at the same pace.
- Taste the bulgur before serving, it sometimes absorbs all the water before fully swelling, add a splash of hot water if it needs it.
The variations
- Swap the bulgur for quinoa for a gluten free version, the soaking time stays about the same.
- Add roasted chickpeas alongside the carrots for a heartier dish with more plant protein.
- For kids, serve the carrots and bulgur separately, skip the mint, and go easy on the lemon.
What to serve it with
- Plain yogurt or labneh
- Warm pita bread
- A chilled glass of lemon water
Storage
Keeps for 2 to 3 days in the fridge in a sealed container, with the carrots and bulgur together or apart. It doesn't freeze well because of the feta and fresh herbs. Reheat gently in the oven or a skillet, and add fresh feta just before serving.
Questions about this dish
Can you make this ahead of time?
Yes, you can roast the carrots and cook the bulgur a few hours ahead. Keep the feta and fresh herbs separate, and assemble everything right before serving to keep it fresh and crisp.
Can you swap the feta for another cheese?
Crumbled fresh goat cheese works well and brings a similar tang. A milder cheese like mozzarella will change the character of the dish more noticeably.
Why does the bulgur need to sit covered?
The lid traps steam that swells the grains evenly. Leaving the pot uncovered risks drying out the top of the bulgur before the bottom finishes cooking.
Can you use baby carrots or new season carrots?
Yes, they're even more tender and cook a bit faster. Check on them a few minutes before the end of roasting so they don't burn.
