Homity pie is a savory tart from Cornwall, originally created to use up garden vegetables. Under a crisp crust, soft potatoes mix with gently cooked leeks and melted cheddar, all bound together with a touch of heavy cream. The result is mild and comforting, with that nice cheesy crust on top.
It's a cold season tart that fills you up without feeling heavy. Kids tend to like it for its simple potato and cheese flavor, and it's easy to make on a weeknight or a slow Sunday. We suggest serving it with a green salad, for a balanced meal without extra effort.

The step by step recipe
-
Roll out the pastry into a tart pan, prick it with a fork and blind bake it at 190°C. 15 min
Cover it with parchment paper and dried beans so it doesn't puff up.
-
Cut the potatoes into small cubes and cook them in salted water. 12 min
Cut them small and even so they're perfectly cooked for the tart.
-
Soften the sliced leeks and onions in butter with the garlic until tender. 12 min
Cover the pan so the leeks steam without browning.
-
Mix the vegetables with the potatoes, cream, half the grated cheddar, parsley, salt and pepper.
Don't mash them, the filling should stay chunky.
-
Fill the tart shell, top with the remaining cheddar and bake until golden on top. 25 min
Finish under the broiler for two minutes for a nicely golden top.
-
Dress the salad with oil, vinegar, salt and pepper and serve it with the warm tart.
Let the tart rest for five minutes, it slices cleanly.
Our tips to get it right
- Drain the potatoes well after cooking, excess water would make the crust soggy.
- Grate the cheddar yourself instead of buying pre shredded cheese, it melts better and tastes stronger.
- If the blind baked crust puffs up a bit at the edges, gently press it down with the back of a spoon before filling.
The variations
- Swap the cheddar for Gruyère or another melting cheese if you can't find it, the texture changes slightly but the tart still works.
- This recipe is already vegetarian, you can make it richer by adding a beaten egg to the filling so it holds together even better.
- For kids in a hurry, cut the tart into small individual slices before serving, they tend to eat it more easily warm than straight out of the oven.
What to serve it with
- Green salad, as in the recipe
- A light soup as a starter
- A glass of sparkling water
Storage
The tart keeps for 2 to 3 days in the fridge in a sealed container. It freezes well once baked and cooled, use within a month. Reheat it in the oven rather than the microwave, so the crust gets crisp again.
