This roast smells of garlic and rosemary the moment it goes into the oven, and the meat stays juicy thanks to a short rest before carving. The tian brings its own sunny note, zucchini, eggplant, and tomatoes that soften slowly until the edges caramelize a little. It's a generous dish, simple to put together, that mostly asks for patience while it bakes.

It makes a great Sunday dinner in summer or fall, when you want to host without spending hours in the kitchen. The dish works well for guests, it slices neatly at the table, and it impresses with its smell as much as its colorful rows of vegetables. Set aside a little time to slice the vegetables thinly, the rest takes care of itself in the oven.

Our tips to get it right

  • Pick a pork roast that's evenly tied, it will cook more evenly and slice more cleanly.
  • Cut the tian vegetables to the same thickness, about 3 to 4 millimeters, so they all cook at the same pace.
  • Check the roast by inserting a knife in the center, the juices should run clear, not pink.

The variations

  • Swap the pork roast for a turkey roast, the cooking time stays close and the garlic flavor works just as well.
  • For a vegetarian version, skip the roast and serve the tian on its own topped with crumbled fresh goat cheese.
  • To save time, cook the tian in a skillet on the stovetop while the roast finishes in the oven, you'll shave off about 15 minutes.

What to serve it with

  • Plain white rice
  • Grilled country bread
  • Glass of grape juice

Storage

The roast and the tian keep for 3 days in the fridge in a sealed container. The tian freezes well for up to 2 months, the roast a bit less since its texture dries out when thawed. Reheat gently in the oven or in a skillet with a little olive oil.
