Haddock is a mild white fish that pairs well with a crisp topping. Here, breadcrumbs mixed with fresh parsley and chives add crunch on top while the fish stays tender underneath. The roasted tomatoes alongside bring juice and a gentle tang, with no sauce to prepare.

This is a weeknight dinner that also works well for guests, since it takes little hands on time and mostly cooks itself in the oven. Kids tend to like it, the golden crust making the fish more appealing than a plain fillet. Keep some fresh bread nearby to soak up the tomato juices.

The step by step recipe

  1. Preheat the oven to 200°C. Cut the tomatoes in half and place them on a baking sheet with the crushed garlic, oil, salt and pepper.

Place them cut side up so they caramelize.

  2. Chop the parsley and chives and mix with the breadcrumbs and soft butter.

The soft butter helps the crust stick to the fish.

  3. Place the haddock fillets in a baking dish, season lightly with salt and cover with the crust, pressing it down firmly with your hand.

Press the crust down well so it stays in place while baking.

  4. Bake the tomatoes first, then add the fish ten minutes later, until the crust is golden. 25 min

Place the fish above the tomatoes so it soaks up their juices.

  5. Serve the fish with the roasted tomatoes and bread for soaking up the juices.

A dash of balsamic vinegar on the tomatoes adds a nice kick.

Our tips to get it right

  • Pick haddock fillets that are firm and roughly the same thickness so they cook evenly.
  • If the crust browns too fast, cover the dish loosely with foil for the last few minutes.
  • Take the butter out of the fridge ahead of time so it is soft and easy to mix into the breadcrumbs.

The variations

  • Swap the haddock for cod or hake, two white fish with a similar texture.
  • For a vegetarian version, spread the herb crust over grilled eggplant slices instead of fish.
  • To save time, make the herb crust ahead and freeze it as a flat disk, then just place it on the fish before baking.

What to serve it with

  • Plain white rice
  • Steamed potatoes
  • A glass of dry white wine

Storage

Cooked fish keeps for 2 days in the fridge in a sealed container. It doesn't freeze well since the crust loses its crunch. Reheat gently in the oven so the fish doesn't dry out.
