Ham, fried eggs and fries is the plate that never disappoints, the one everyone finishes without a fight. The yolk stays runny, the white is just set, the ham only needs a quick warm up to keep its softness, and the fries come out crisp outside, soft inside. Nothing fancy, but each part hits its best point.

This is the dinner for nights when you don't want to think, or dirty five pots. Kids love dipping their fries into the yolk, adults get a taste of childhood again. Serve it on a rushed Tuesday or a quiet Sunday, it wins everyone over without any real effort.

The step by step recipe

  1. Peel the potatoes, cut them into even sticks and dry them in a kitchen towel.

Rinse them in cold water first to remove the starch, they'll crisp up better.

  2. Toss the fries with the oil, paprika and salt, spread them on the hot baking sheet and bake at 220°C. 30 min

Flip them halfway through and don't crowd the sheet, or they'll steam instead of roast.

  3. Melt the butter in a large skillet and crack the eggs in one by one, season with salt and pepper.

Crack each egg into a cup first, so you avoid any shell pieces.

  4. Cook over low heat until the whites are set and the yolks still glossy. 4 min

Cover the pan for a minute, the top of the yolk clouds over gently.

  5. Plate the eggs and ham with the fries.

Warm the ham for ten seconds in the hot skillet, it tastes even better.

Our tips to get it right

  • Pick a firm, waxy potato like Yukon Gold, it holds up better in the oven and crisps up nicely.
  • Cook the eggs right before serving, they don't wait well, the yolk firms up within minutes at room temperature.
  • If you're frying eggs in batches, keep the first ones warm in a turned off oven with the door ajar, so they don't keep cooking.

The variations

  • Swap the ham for bacon or crisped pancetta for extra crunch and a smoky flavor.
  • For a vegetarian version, replace the ham with sautéed mushrooms or melted cheese slices on top of the eggs.
  • For a quicker kid friendly version, cut the fries thinner and shave five minutes off the baking time, they'll be done faster and just as golden.

What to serve it with

  • A green salad with vinaigrette
  • Ketchup or homemade mayonnaise
  • A glass of sparkling water

Storage

Leftover fries reheat well in the oven for a few minutes, but the eggs are best eaten fresh, they don't hold up. Store any leftover fries in a sealed container in the fridge for up to 2 days. This dish doesn't freeze well, because of the eggs and cooked potatoes.

Questions about this dish

How do you keep the fries from sticking to the baking sheet?

Preheat the sheet before adding the fries, they sear right on contact. Also avoid crowding them, otherwise they steam instead of crisping and stick more.

Can you prep the fries ahead of time?

You can peel and cut the potatoes a few hours ahead, keeping them in cold water in the fridge. Dry them well before baking so they crisp up properly.

How do you get a perfectly runny yolk?

Cook the eggs over low heat and watch closely during the last four minutes. Cover the pan for one minute at the end, the white finishes setting without the yolk hardening.

Can you use a different potato variety?

Yes, a firm variety like Yukon Gold works better than a starchy, floury potato. Potatoes too high in starch soften faster in the oven.

How long does it take to make ham, fried eggs and french fries?

Count 40 min in total, prep and cooking included. The recipe is rated “very easy”.
