Ham and mozzarella calzone with salad

A ham and mozzarella calzone is a folded pizza filled with ham, mozzarella and ricotta, served with a green salad. It serves 4, takes about 1.5 hours, rates medium difficulty, and costs around €2.30 per person. The key to success is a well risen dough and a tightly sealed edge so the filling doesn't leak out during baking.

Tonight it's pizza folded in half, a melty calzone with ham, mozzarella and ricotta, served with a green salad.

A calzone is pizza folded over itself, with the filling sealed completely inside. Ham brings softness, mozzarella melts into long strings, and ricotta smooths everything out with a creamy touch. The result is a golden, crisp crust outside and a generous, melty filling inside, a welcome change from the dry calzones you sometimes get at a pizzeria.

This is a great family dinner, kids love having their own individual pocket to cut into with a fork. Plan a little extra time for the dough to rise, but everything else moves quickly. Mon Chou suggests making the dough earlier in the day so all you have left to do in the evening is fill and bake.

The step by step recipe

  1. Make the dough with the flour, yeast, salt, water and oil, and let it rise. 1 h

A well risen dough folds without cracking.

  2. Mix the ricotta with the chopped ham, diced mozzarella and a little tomato sauce.

Drain the mozzarella well, it releases a lot of water.

  3. Roll out four dough circles, fill one half of each and fold over.

Wet the edge with a damp finger before sealing it.

  4. Seal the edges by rolling them and prick the top, then brush with olive oil.

Make a small hole on top so steam can escape.

  5. Bake at 240°C, serve with the remaining tomato sauce warmed up and the green salad. 15 min

Let it cool for five minutes before cutting, the filling is very hot.

Our tips to get it right

  • Knead the dough by hand for a few minutes before it rises, it becomes more elastic and folds without cracking.
  • Never overload the inside with tomato sauce, too much liquid soaks the dough and keeps it from baking properly.
  • Preheat the oven and baking sheet well before baking, a hot oven crisps the crust right from the first minutes.

The variations

  • Swap the ham for sauteed mushrooms for a vegetarian version that's just as melty.
  • Use shredded Swiss cheese instead of mozzarella if you prefer a firmer, less stringy filling.
  • For a quick version, use store bought pizza dough and skip the rising step, the calzone will be ready in 30 minutes.

What to serve it with

  • A well dressed green salad
  • An extra drizzle of olive oil
  • Sparkling water with lemon

Storage

The calzone keeps for 2 days in the fridge in a sealed container. It freezes well once baked and cooled, reheat it in the oven rather than the microwave to get the crust crisp again.

Questions about this dish

Can you make the calzone dough ahead of time?

Yes, you can make the dough the day before and let it rise in the fridge overnight. Take it out half an hour before rolling so it comes back to room temperature.

Can you swap the ricotta for another cheese?

You can use well drained fresh cheese like faisselle or cottage cheese instead of ricotta. It will be slightly less creamy but just as melty.

How do you keep the calzone from opening while baking?

The trick is to wet the edge of the dough well before sealing it and roll it firmly shut. Leave a clean border with no filling so the seal holds.

Does the calzone freeze well?

Yes, it freezes very well once baked and completely cooled. Reheat it straight from frozen in the oven, no need to thaw, to keep the crust crisp.
