This isn't your average light salad. Diced Comté, tender potatoes and hard boiled eggs give it real substance, while crushed walnuts add crunch to every bite. A bold mustard vinaigrette ties it all together without overpowering the other ingredients.

It's the kind of dish you can throw together on a busy weeknight without much thought, but it also holds its own for a Sunday lunch served with fresh bread. Kids tend to pick out the cubes of cheese and the eggs, and everyone can build their plate the way they like it.

The step by step recipe

  1. Cook the potatoes in their skins in salted water, then peel them and slice into rounds. 20 min

Pierce them with a knife, they're done when the blade slides in easily.

  2. Hard boil the eggs, cool them under cold water, then peel and cut into quarters. 10 min

Exactly ten minutes for a firm yolk that isn't grayish.

  3. Make the vinaigrette with the mustard, vinegar, oil, chopped shallot, salt and pepper.

Whisk the mustard and vinegar together before adding the oil, the vinaigrette will hold together better.

  4. Cut the Comté into cubes and roughly chop the walnuts.

Toast the walnuts for a few minutes in a dry pan.

  5. Toss all the ingredients over the washed lettuce, season, and serve with the bread.

Add the eggs last so they don't get crushed.

Our tips to get it right

  • Cut the Comté into generous cubes so it holds its shape in the salad and stands out against the potatoes.
  • Taste the vinaigrette before tossing it in, it should be fairly punchy since it will mellow once mixed with everything else.
  • Cook the potatoes and eggs a bit ahead of time so they have a chance to cool before you assemble the salad.

The variations

  • Swap the Comté for Swiss cheese or Gruyère if that's what you have on hand, the result stays close to the original.
  • For a heartier version, add a handful of crisped bacon bits along with the other ingredients, it's still just as easy to make.
  • If your kids aren't fans of raw shallot, leave it out of their portion of vinaigrette and serve the rest on the side for the adults.

What to serve it with

  • Toasted country bread
  • A cold sparkling water
  • Fresh farmhouse apple juice

Storage

Keep the salad in a sealed container in the fridge for 1 to 2 days, adding the vinaigrette at the last moment if you can. It doesn't freeze well because of the hard boiled eggs and potatoes. Take the Comté out a bit before serving so it tastes its best.

Questions about this dish

Can you make this salad ahead of time?

Yes, you can cook the potatoes and eggs the day before and keep them in the fridge. Make the vinaigrette separately and toss everything together just before serving to keep the crunch.

What type of potato works best here?

A waxy potato like fingerling or red bliss holds its shape better when sliced. It keeps neat rounds once mixed with the rest of the ingredients.

Can you swap the walnuts for another nut?

Yes, crushed hazelnuts or almonds work just as well in place of walnuts. Toast them lightly first to bring out more flavor.
