Ficelle picarde turns a simple crepe into a full meal. Under the thin golden batter, soft ham and creamy mushrooms meet melted gruyere that browns on top. The contrast between the tender roll and the crisp gratin gives it the comforting feel typical of dishes from northern France.

This is an everyday recipe that still feels special enough for a Sunday table. It comes together easily on a weeknight, and kids tend to love it for the ham and melted cheese. Mon Chou suggests it for family dinners where everyone goes back for seconds without being asked.

The step by step recipe

  1. Whisk the flour, the three eggs, the milk and a pinch of salt together, then let the batter rest. 15 min

Pour the milk into the flour little by little to avoid lumps.

  2. Cook eight thin crepes in a buttered pan.

Butter the pan only for the first crepe, the rest will cook fine on their own.

  3. Brown the sliced shallots and mushrooms in butter, add half the cream, season with salt and pepper.

Let the mushroom liquid fully evaporate before adding the cream.

  4. Fill each crepe with half a slice of ham and some mushrooms, roll them up and arrange them in a baking dish.

Keep the crepe edges neat, they'll be easier to roll.

  5. Spread the remaining cream on top, sprinkle with gruyere and bake at 200°C until golden. Serve with the dressed salad. 15 min

Finish with five minutes under the broiler for a nicely spotted gratin.

Our tips to get it right

  • Chop the mushrooms and shallots finely so they cook fast and blend smoothly with the ham inside each crepe.
  • If you make the crepes ahead, stack them with a kitchen towel between each one so they stay soft and pliable.
  • Use a wide baking dish rather than a deep one, the rolled crepes brown better laid side by side than stacked.

The variations

  • Swap the cooked ham for cured ham for a stronger flavor, just use a bit less since it's saltier.
  • For a vegetarian version, double the mushrooms and add cooked spinach instead of the ham.
  • For quick kid friendly crepes, make smaller ones and skip the rolling, just fold them in half over the filling.

What to serve it with

  • Simple dressed green salad
  • Fresh bread for the sauce
  • A glass of cider

Storage

Ficelle picarde keeps for 2 days in the fridge in a covered dish. It freezes well once baked, just reheat it in the oven at 180°C. Avoid the microwave, which makes the crepes soggy.
