This is the kind of dish that brings everyone to the table happily. The spinach melts into a lightly thickened cream sauce, mild and warmed with nutmeg, with none of the bitterness people sometimes expect. The fried egg adds a runny yolk that mixes right into the spinach, and the boiled potatoes soak up all that sauce.

It's a perfect weeknight dish, quick to make with frozen spinach you probably already have on hand. Kids tend to love it for its creamy, mild character, so different from the stern image spinach sometimes has. Make it on a rushed evening or a quiet Sunday, it always feels like more effort than it actually takes.

The step by step recipe

  1. Peel the potatoes, cut them into chunks and boil them in salted water. 20 min

Poke them with the tip of a knife to check if they're done.

  2. Sauté the chopped onion in half the butter, then add the thawed spinach, well pressed to remove water. 8 min

Really squeeze it hard in a kitchen towel, otherwise the sauce stays watery.

  3. Sprinkle with flour, pour in the milk and cream, add the nutmeg, salt and pepper, and let it thicken. 5 min

Stir constantly once the flour goes in, to avoid lumps.

  4. Fry the eggs in the remaining butter until the whites are set. 4 min

Cover the pan for a minute if you want a firm white without flipping the egg.

  5. Plate the spinach with the potatoes and one fried egg per plate.

Pierce the yolk right before eating, it works as an extra sauce.

Our tips to get it right

  • Drain the thawed spinach well before pressing it, excess water is the enemy of a creamy sauce.
  • Pick waxy potatoes, they hold their shape better in boiling water and won't fall apart.
  • Crack each egg into a small bowl first before sliding it into the pan, so you never break a yolk by accident.

The variations

  • Swap the heavy cream for fromage frais for a lighter texture that's still creamy.
  • For an egg free version, melt a slice of cheese over the hot spinach right before serving.
  • To save time, use frozen diced potatoes and boil them straight from the freezer.

What to serve it with

  • A cold glass of apple juice
  • A slice of whole grain bread
  • A small tangy green salad

Storage

Creamed spinach keeps for 2 days in the fridge in a sealed container. It freezes well, but without the egg or the already cooked potatoes. Reheat it gently in a saucepan, adding a splash of milk if the sauce has thickened too much.

Questions about this dish

Can you use fresh spinach instead of frozen?

Yes, use about 1 kg of fresh spinach, wilted in a pan and drained well before pressing. The result is just as good, with a bit more prep work.

How do you keep the spinach sauce from turning watery?

The trick is to press the thawed spinach hard in a clean kitchen towel to squeeze out all the water. Let the sauce simmer a couple more minutes if it still needs thickening before serving.

Can you make creamed spinach ahead of time?

Yes, you can make it the day before and reheat it gently the next day. It's best to fry the eggs and cook the potatoes just before serving so they stay at their best.

Is this a good dish for kids who don't like spinach?
