Under a golden, crackly crust of comté and breadcrumbs, the cod stays moist and flakes into big pieces. Underneath, the leek fondue adds softness and a mild creaminess that balances the cheese. The mustard in the crust wakes everything up without ever taking over the dish.

This is the kind of recipe that makes you want to cook fish on a weeknight, because it asks for few steps and delivers a lot of flavor. It also works well for a Sunday family meal or a dinner with friends, since the golden crust looks impressive without complicating the prep.

The step by step recipe

  1. Slice the leeks thinly and cook them gently with the butter over low heat. 20 min

Cover the pan, they cook in their own steam.

  2. Add the cream, season with salt and pepper, and let it thicken. 5 min

The fondue should be creamy, not runny.

  3. Grate the comté and mix it with the breadcrumbs and mustard.

The mustard brings out the cheese flavor.

  4. Place the fillets over the fondue in a baking dish, then cover with the comté crust.

Press down lightly so the crust sticks.

  5. Bake at 190°C until the crust is golden. 15 min

Finish under the broiler for 2 minutes to brown it.

Our tips to get it right

  • Pick cod fillets that are thick and similar in size, they will cook evenly under the crust.
  • Drain the leeks well after cooking if any water has come out, otherwise the fondue can turn too runny under the fish.
  • Pat the cod fillets dry with paper towel before placing them on the fondue, the crust sticks better to fish that isn't too wet.

The variations

  • Swap the cod for hake or pollock, two white fish that behave the same way during cooking.
  • For a vegetarian version, spread the comté crust directly over the leek fondue and steamed potato slices instead of the fish.
  • For kids, blend the leek fondue a bit more finely and cut the fillets into smaller pieces before topping them with the crust.

What to serve it with

  • Plain white rice
  • Steamed potatoes
  • A crisp green salad

Storage

The dish keeps for 2 days in the fridge in a closed container. Reheat it gently in the oven so the crust gets crispy again without drying out the fish. Freezing isn't recommended, the leek fondue and the golden crust lose their texture once thawed.

Questions about this dish

Can you make the leek fondue ahead of time?

Yes, make the fondue a day ahead and keep it in the fridge. Just warm it up slightly before placing the fish and the crust on top.
