Cobb salad plays on contrast, tender chicken, crunchy bacon, soft boiled egg, creamy avocado and sharp blue cheese. Every bite tastes a little different depending on what your fork picks up, which is exactly what makes this salad fun to eat. The tangy mustard dressing ties everything together without hiding any single ingredient.

This is the salad for nights when you want a full meal without spending hours in the kitchen, or for a summer lunch with friends on the patio. Kids are not always fans because of the blue cheese and avocado, but you can easily set those aside for them. Mon Chou suggests this loaded version, neatly arranged in the bowl.

The step by step recipe

  1. Drop the eggs into boiling water, then cool them under cold water and peel them. 10 min

Drop them into water that's already boiling so they cook evenly and peel easily.

  2. Pan sear the chicken breasts in a little oil, season with salt and pepper. 12 min

Don't poke them with a fork, they'll hold onto their juices better.

  3. Cook the bacon in a dry pan until crispy, then drain it.

No need for any oil, the bacon releases its own fat.

  4. Make the dressing by whisking the oil, vinegar, mustard, a little salt and pepper.

Add a small spoon of honey for a rounder flavor.

  5. Dice the chicken, quarter the eggs, slice the avocados, crumble the blue cheese and finely chop the chives.

Squeeze lemon over the avocado right away so it keeps its color.

  6. Spread the shredded romaine in a dish and arrange all the ingredients in rows. Drizzle with dressing at the very last moment.

Pour the dressing at the table, the salad stays nice and crisp.

Our tips to get it right

  • Drain the bacon well on paper towels once it's crispy, otherwise it softens as soon as it touches the salad.
  • Let the chicken rest a few minutes before dicing it, it stays juicier that way.
  • Pick a mild blue cheese if you're not used to it, it already adds plenty of flavor to the whole salad.

The variations

  • Swap the bacon for diced smoked ham if you want a milder version.
  • For a vegetarian take, skip the chicken and bacon and add roasted chickpeas instead.
  • To save time, use a store bought rotisserie chicken, already cooked and diced.

What to serve it with

  • Crusty bread or toast
  • Cold homemade lemonade
  • Light chilled soup starter

Storage

Keep the components separate in a sealed container in the fridge for up to 2 days, the assembled salad doesn't hold up as well because of the avocado. This salad doesn't freeze well. Assemble and dress it right before serving to keep every texture intact.

Questions about this dish
