These patties combine the soft texture of mashed chickpeas with the gentle crunch of grated carrots, lifted by cumin and fresh cilantro. Pan frying gives them a lightly crisp crust on the outside while keeping the inside tender, avoiding the dry, crumbly texture that plain veggie patties can sometimes have.

This is the kind of dish to make on a weeknight when you want a meatless dinner that still feels satisfying, or for a relaxed weekend lunch with a side salad. Kids tend to enjoy them, especially dipped in the yogurt sauce, and Mon Chou keeps this one on hand as an easy, no fuss family dinner.

The step by step recipe

  1. Mash the chickpeas with a fork and mix them with the grated carrots, egg, flour, and cumin.

Squeeze the carrots in your hands to remove their juice.

  2. Add the chopped cilantro, salt, and pepper.

Swap the cilantro for parsley if you're not a fan.

  3. Shape into eight tightly packed patties.

Wet your hands first, the mixture will stick less.

  4. Brown them in the oil in a pan, four minutes on each side. 8 min

Only flip them once they're golden under the spatula.

  5. Mix the yogurt, lemon juice, salt, and pepper, and serve with the salad.

Grate a little lemon zest into the sauce.

Our tips to get it right

  • Drain the chickpeas thoroughly before mashing them, too much liquid makes the mixture too soft to hold its shape.
  • Let the mixture rest for five minutes before shaping the patties, this gives the flour time to absorb moisture so they hold together better during cooking.
  • Use a nonstick pan and wait until the oil is properly hot before adding the patties, otherwise they'll stick and break apart when you try to flip them.

The variations

  • Swap the carrots for grated zucchini, squeezed well, for a lighter version in summer.
  • Use a teaspoon of curry powder or smoked paprika instead of cumin for a different flavor.
  • If your kids aren't fans of cilantro, just leave it out or use parsley instead, the taste stays mild.

What to serve it with

  • A lemony green salad
  • Warm pita bread
  • A glass of lemon water

Storage

Cooked patties keep for 2 to 3 days in the refrigerator in a closed container. They freeze well once cooled, with parchment paper between each one. Reheat them for a few minutes in a pan or oven to bring back their crisp crust.

Questions about this dish

Can you make the mixture ahead of time?

Yes, you can prepare the mixture the day before and keep it in the refrigerator in a closed container. Shape the patties just before cooking so they hold together better.
