Chicken chasseur is a sauce that takes its time to turn rich and fragrant, with mushrooms that concentrate their flavor, shallot that melts into softness, and tomato that brings acidity and color. The white wine deglazes everything and leaves a sauce that clings nicely to the chicken without feeling heavy.

It's a weeknight dish that needs little attention once it's covered and simmering, perfect for a fall or winter evening when you want something comforting without spending the whole night in the kitchen. Kids recognize the familiar taste of chicken and sautéed potatoes, and the mushrooms blend easily into the sauce for anyone who isn't a fan of whole pieces.

The step by step recipe

  1. Brown the chicken thighs in the oil, then set them aside. 10 min

Start them skin side down in the pan.

  2. Cook the sliced mushrooms until all the liquid has evaporated, then add the shallots. 8 min

Don't salt the mushrooms at the start, they'd release too much water.

  3. Sprinkle in the flour, deglaze with the white wine, add the tomatoes and return the chicken to the pan. 3 min

Let the wine reduce for a moment, it loses its sharpness.

  4. Cover and let it simmer gently. 30 min

Turn the chicken halfway through cooking.

  5. Sauté the diced potatoes in the butter, then serve with the chicken and parsley. 20 min

Parboil them for 5 minutes first so they brown without burning.

Our tips to get it right

  • Pick firm, dry button mushrooms, they'll release less water and brown better.
  • If the sauce looks too thin at the end, uncover it for the last 5 minutes so it reduces a bit.
  • Cut the potatoes into even cubes so they cook at the same rate and brown evenly.

The variations

  • Swap the chicken thighs for boneless thighs for a slightly faster cook time.
  • For a meatless version, replace the chicken with whole portobello mushrooms and keep the same sauce.
  • For kids in a hurry, blend part of the mushroom and tomato sauce, they'll find it smoother and milder.

What to serve it with

  • A sharply dressed green salad
  • Bread for soaking up the sauce
  • Sparkling water with lemon

Storage

Chicken chasseur keeps for 2 to 3 days in the fridge in a sealed container. It freezes well without the potatoes, for up to 2 months. Reheat it gently in a pan or over low heat with a splash of water to loosen the sauce.

Questions about this dish

Can you replace the white wine with something else?

Yes, swap it for chicken broth with a splash of white vinegar. The flavor will be slightly less rounded but the sauce will still taste good.

Can you make chicken chasseur ahead of time?

Yes, it actually improves after a night in the fridge. Reheat it gently the next day and cook the sautéed potatoes fresh so they stay crisp.

Why brown the mushrooms separately?

Mushrooms release a lot of water as they cook. Browning them on their own before adding them to the sauce lets them develop more flavor instead of just boiling.

Can you use other mushrooms instead of button mushrooms?

Yes, seasonal mushrooms like oyster mushrooms or chanterelles work well. Keep the same total weight so the sauce has the right consistency.
