Under a crisp golden crust hides a soft mash with a mellow melted cheese flavor. The shredded cheese adds richness and a light stretch, while the nutmeg warms up the whole dish without taking over. It turns plain mashed potatoes into something fun to eat with your hands, crunchy outside and completely soft inside.

This is the kind of dinner that shakes up a regular weeknight, quick to pull together and almost always a hit with kids, who love the waffle shape. The green salad brings just enough freshness to balance the melted cheese. You can also make it for a relaxed Sunday night with the family, with a spoonful of sour cream on the side.

The step by step recipe

  1. Cook the peeled potatoes in salted water, then mash them. 20 min

Dry out the mash over the heat for a minute to get rid of excess water.

  2. Stir in the eggs, flour, milk, half the cheese, nutmeg, salt and pepper.

The batter should be thick but pliable, not runny.

  3. Heat the waffle iron, butter it, pour in a ladle of batter, and sprinkle with a bit of cheese.

Don't fill it all the way, the batter will puff up.

  4. Cook until the waffle is nicely golden and releases on its own. 5 min

Keep the cooked waffles warm in the oven at 100°C while you make the rest.

  5. Dress the salad, sprinkle the waffles with chives, and serve right away.

A spoonful of sour cream on the side is a real treat.

Our tips to get it right

  • Pick a starchy potato variety, it gives a drier mash that holds together better once cooked.
  • Let each waffle cook until it truly releases on its own, pulling it out too early tears the crust.
  • Make the batter right before cooking, it loses its structure if it sits too long in the fridge.

The variations

  • Swap the shredded cheese for Comté or Gruyère for a stronger flavor.
  • Stir in cooked bacon bits for a heartier, non vegetarian version.
  • For a quick kid friendly version, use a mini waffle iron to make small rounds that cook faster.

What to serve it with

  • A well dressed green salad
  • A vegetable soup starter
  • A spoonful of sour cream

Storage

The waffles keep for 2 days in the fridge in a sealed container. Reheat them for a few minutes in the oven or toaster to bring back the crispness, the microwave makes them soggy. Freezing isn't recommended, the texture suffers once thawed.

Questions about this dish

Can you make these waffles without a waffle iron?

Without a waffle iron, you can cook the batter like pancakes in a skillet with a little butter, a few minutes per side. The result will be less crispy but just as soft inside.

Can you make the mashed potatoes ahead of time?

Yes, you can cook and mash the potatoes the day before and keep them in the fridge. Add the eggs, flour and cheese right before cooking the waffles so the batter stays firm.

What cheese works well instead of shredded cheese?

Comté, Gruyère or a good cheddar all work well and each brings a slightly different flavor. Avoid very soft cheeses, they make the batter too runny.

How do you keep the batter from sticking to the waffle iron?

Butter both plates generously before every batch, even with a nonstick waffle iron. Mashed potato batter is stickier than a classic waffle batter and needs a bit more fat.

How long does it take to make cheesy potato waffles with a green salad?

Count 45 min in total, prep and cooking included. The recipe is rated “easy”.
