Entomatadas are corn tortillas dipped in a spicy tomato sauce, rolled with cheese and baked until golden. This recipe serves 4, takes 40 minutes, is easy to make, and costs €2.30 per person. The trick is keeping the sauce hot while you dip the tortillas, so they stay soft without tearing.

There's no frying or crunch here, just soft tortillas that soak up a tomato sauce spiced with jalapeño and cumin. The cheese melts inside and stretches the moment you cut into a roll. Refried beans add a denser texture on the side, and a spoonful of sour cream tames the heat right before you dig in.
This is a weeknight dinner that needs little attention once the sauce is ready, and rolling the tortillas is an easy job for kids to help with. For them, you can tone down the jalapeño or swap it for bell pepper. Adults who like more heat can add a dash of hot sauce at the table.

The step by step recipe
-
Blend the tomatoes with half the onion, the garlic, the jalapeño and the cumin, then cook the sauce over medium heat with a spoonful of oil. 15 min
Sear the blended sauce in hot oil first, it concentrates and loses its acidity.
-
Mash the drained beans with a fork and heat them in a skillet with a spoonful of oil and a little water to make refried beans.
Mash only halfway, a few whole beans give it more character.
-
Dip each tortilla in the hot sauce for a few seconds, fill it with cheese, roll it up and arrange it in a baking dish.
Work on one tortilla at a time and keep the sauce hot, the tortilla turns soft and rolls without breaking.
-
Cover with sauce, scatter the remaining cheese on top and bake at 200°C. 12 min
Watch the dish closely, the cheese should barely start to color.
-
Serve with the sour cream, the remaining chopped onion, the cilantro and the refried beans.
If the jalapeño is too spicy for kids, swap it for half a red bell pepper, it's just as good.
Our tips to get it right
- Pick good quality crushed tomatoes, they're the base of the whole sauce and shouldn't taste too acidic.
- Make the sauce and refried beans ahead of time, so you only need to roll and bake when it's time to eat.
- Don't let the rolled tortillas sit too long before baking, they get soggy faster once they're filled.
The variations
- Swap the shredded cheese for crumbled fresh cheese like mild feta, for a creamier version that stretches less.
- For a quicker version, skip blending the sauce, it just ends up with a bit more texture.
- For kids sensitive to spice, leave the jalapeño out of the sauce and serve a small bowl of hot sauce on the side for adults.
What to serve it with
- Plain white rice
- Avocado and lime salad
- Sparkling water with lime
Storage
Entomatadas keep for 2 days in the fridge in a sealed container. Reheat them in the oven rather than the microwave so the cheese melts properly again. Freezing isn't recommended, the tortillas get too soft once thawed.
