The brayaude omelet comes from the mountains of Auvergne, where cooking relies on simple pantry staples, eggs, potatoes and a good aged cheese. Here young cantal melts into the beaten eggs while the diced potatoes bring a soft bite with a touch of golden crust. The cured ham adds just enough saltiness without overpowering the rest.
This is the kind of dish you make on a weeknight when you want something filling without spending hours in the kitchen, and that's exactly why Mon Chou built it this way. Kids tend to like it because it's mild, cheesy and easy to eat, while the green salad gives adults a fresh contrast to the warm plate.

The step by step recipe
-
Peel the potatoes, cut them into small cubes and sauté them with the chopped onion in the oil. 15 min
Cover the pan at first, the potatoes steam then turn golden.
-
Add the ham cut into strips and cook for one minute.
The ham only needs to warm through, not cook.
-
Beat the eggs with the salt, pepper, parsley and the cantal cut into small cubes.
Don't beat too hard, just enough to mix everything.
-
Pour the eggs over the potatoes in the pan, let it set over low heat and flip the omelet using a plate. 12 min
Slide the omelet onto the plate, cover with the pan and flip in one confident motion.
-
Serve the omelet in wedges with the salad dressed in vinaigrette.
The omelet is great served warm.
Our tips to get it right
- Cut the potatoes into even small cubes so they all cook at the same pace, that way you won't end up with any still firm in the middle.
- Use a wide nonstick skillet, it makes flipping the omelet onto a plate much easier and keeps it from breaking apart.
- Keep the cantal in small cubes rather than grated, it leaves melty pockets through the omelet instead of melting into everything.
The variations
- Swap the Auvergne cured ham for cooked ham or smoked bacon bits for a milder or smokier flavor.
- For a vegetarian version, skip the ham and add a few sautéed mushrooms along with the potatoes.
- To make it quicker for kids, cut the potatoes thinner, they'll cook in about ten minutes instead of fifteen.
What to serve it with
- A well dressed green salad
- Crusty country bread
- Chilled sparkling water
Storage
The omelet keeps for 2 days in the fridge in a sealed container. It doesn't freeze well, the potatoes turn mushy. Reheat it gently in a covered skillet, or eat it cold the next day for a packed lunch.
