Blue cheese and walnut pasta

Blue cheese and walnut pasta is a creamy pasta dish for 4 people, ready in 25 minutes, very easy to make, for about €2.00 per person. The key is to melt the blue cheese over very low heat without letting it boil, so the sauce stays smooth and never splits.

Blue cheese melts slowly into the cream to form a rich, tangy sauce that coats the pasta without drowning it. Crushed walnuts add the crunch the dish would otherwise miss, and the softened shallot takes the edge off the cheese's sharpness just enough. It is a dish with real character that still comes together with very little effort, the sauce ready by the time the pasta is cooked.

Mon Chou suggests this dish for evenings when you want something comforting without spending hours in the kitchen. It is more of a grown up meal than a kids one, since blue cheese is not always a crowd pleaser with younger palates. Serve it with a green salad to round out the meal and bring some freshness against the richness of the sauce.

The step by step recipe

  1. Cook the pasta in salted water. 10 min

Save a bit of the cooking water.

  2. Soften the chopped shallot in the butter. 3 min

    It should stay translucent.

  3. Add the cream and the blue cheese in pieces, then let it melt over low heat, stirring. 5 min

The blue cheese is salty, so don't add salt to the sauce.

  4. Toss the drained pasta with the sauce, adding a little cooking water.

The sauce should coat the pasta without being too thick.

  5. Sprinkle with crushed walnuts and serve with the dressed salad.

Toast the walnuts dry in a pan for one minute.

Our tips to get it right

  • Cut the blue cheese into small pieces before melting it, it will blend into the cream faster and more evenly.
  • Always save a bit of pasta cooking water, it helps loosen the sauce if it thickens too much as it cools.
  • Pick a milder blue cheese for a gentler sauce, or a more aged one if you like a stronger, sharper flavor.

The variations

  • Swap the blue cheese for gorgonzola or roquefort to change the character of the sauce.
  • Add a handful of pan fried bacon lardons with the shallot for a heartier version.
  • Use hazelnuts or sliced almonds instead of walnuts if you prefer a milder crunch.

What to serve it with

  • Crisp green salad
  • Toasted country bread
  • A glass of dry white wine

Storage

Blue cheese pasta keeps for 2 days in the fridge in a sealed container. Reheat it gently in a pan or saucepan with a splash of water or cream to bring the sauce back together. Freezing is not recommended, as cream and cheese based sauces tend to split once thawed.
