Beef miroton with mashed potatoes

Beef miroton is a simmered dish that turns leftover pot-au-feu beef into tender slices coated in an onion sauce. For 4 people, it takes 50 minutes to make, requires no cooking skill, and costs about €2.60 per person. The key is to keep the beef at a gentle simmer so it warms through without drying out.

Tonight, we're giving pot-au-feu beef a second life as miroton, simmered in an onion sauce with creamy mashed potatoes.

Beef miroton is pot-au-feu's second act. Slices of already cooked beef simmer in a sauce of softened onions, thickened with flour and given depth by a spoonful of tomato paste. The result tastes mellow and savory, with that caramelized onion flavor coating every bite without ever hiding the beef.

This is the kind of weeknight dish you make without overthinking it, built from whatever is left in the fridge. Kids recognize the familiar taste of pot-au-feu in a more comforting form, and the creamy homemade mashed potatoes win everyone over on a cold fall or winter evening.

The step by step recipe

  1. Thinly slice the onions and cook them gently in half the butter until soft. 12 min

Keep the heat low, they should turn golden and sweet.

  2. Sprinkle in the flour, add the tomato paste, stir, then pour in the broth. 3 min

Add the broth gradually to avoid lumps.

  3. Cut the beef into thin slices and add them to the sauce, let it simmer gently. 20 min

Don't let it boil, the already cooked meat will dry out.

  4. Cook the peeled potatoes, then mash them with the hot milk and the remaining butter. 20 min

Salt the cooking water, the mash tastes better for it.

  5. Stir the vinegar into the miroton, sprinkle with parsley and serve with the mashed potatoes. 1 min

Taste before adding more salt, the broth is already seasoned.

Our tips to get it right

  • Pick thin, even slices of beef, they soak up the sauce better and heat through evenly without drying out.
  • Let the onions turn a deep golden color before adding the flour, that color gives the sauce its taste and light caramel note.
  • Make the mashed potatoes while the miroton simmers, so both dishes finish together and nothing goes cold.

The variations

  • Swap the pot-au-feu beef for sliced roast beef, the texture changes slightly but the method stays the same.
  • For a vegetarian version, replace the meat with sliced seitan or large roasted mushrooms simmered in the same onion sauce.
  • For a quicker meal with hungry kids, use instant mashed potatoes and cut the beef's simmering time to 10 minutes.

What to serve it with

  • A green salad with vinaigrette
  • Pickles on the side
  • A glass of light red wine

Storage

Beef miroton keeps for 2 to 3 days in the fridge in a sealed container. It freezes well, without the mashed potatoes, for up to 2 months. Reheat gently in a saucepan or microwave so the meat doesn't toughen.

Questions about this dish

Can you make beef miroton without leftover pot-au-feu?

Yes, you can boil beef specifically for this dish, or use sliced roast beef instead. What matters is that the meat is already cooked, since miroton just warms it through in the sauce.

Why does the beef turn tough in miroton?

The meat is already cooked, so simmering it too long or at a hard boil dries it out and toughens it. Just let it warm gently in the sauce without ever letting it boil.

Can you make beef miroton ahead of time?

Yes, it actually tastes better after resting overnight in the fridge, as the onion sauce develops more flavor. Reheat it gently the next day before serving.

Can you freeze beef miroton?

Yes, the sauce and meat freeze well for up to 2 months in an airtight container. Make the mashed potatoes fresh when serving, since they don't freeze as well.
