Beef fondue with oven baked potatoes

Beef fondue is a shared meal where everyone cooks their own beef cubes in hot oil, served here with oven baked potatoes. For 4 people, it takes 50 minutes and stays easy to make, at a cost of €5.40 per person. Success comes down to well dried meat brought to room temperature, and oil hot enough to cook without drying the meat out.

Tonight, we're turning dinner into a little celebration, with a beef fondue where everyone cooks their own bites of beef and dips them into homemade sauces.

Around the fondue pot, everyone spears their piece of beef, dips it into the simmering oil, and picks a sauce to go with it. Cubes of rumsteck or sirloin stay tender inside when you cook them just a few seconds past your liking, and the golden crust that forms outside makes all the difference. Oven baked potatoes, with their crisp skin, sit alongside without stealing the show.

This is a dinner that turns a regular weeknight into a small celebration, perfect for a slow Sunday evening in fall or winter. Kids love spearing their own meat and choosing between the fresh yogurt sauce, the homemade mayonnaise, or ketchup. Mon Chou built this version around three simple sauces, so everyone finds their favorite without extra trips to the store.

The step by step recipe

  1. Place the washed and fork pricked potatoes on the oven rack at 200 degrees. 45 min

A pinch of coarse salt on the skin makes it crisp and flavorful.

  2. Cut the beef into 2 cm cubes, pat them dry with paper towels, and let them come to room temperature.

Dry meat won't make the hot oil splatter.

  3. Make a mayonnaise with the egg yolks, mustard, a thin stream of oil poured in very slowly, salt, and pepper.

All the ingredients need to be at the same temperature so the mayonnaise doesn't split.

  4. Mix the yogurt with pressed garlic, chopped chives, and chopped shallot for a fresh sauce, and serve the ketchup and pickles in small bowls.

Let the sauce rest in the fridge, the garlic mellows gently into the yogurt.

  5. Heat the oil in the fondue pot on the stove until it simmers, then move it to the tabletop burner and let everyone spear and cook their own cubes.

A piece of bread dropped in the oil should turn golden in one minute, that's the right temperature.

Our tips to get it right

  • Cut all the beef cubes to the same size, about 2 cm, so they cook at the same pace in the pot.
  • Set out one fondue fork per person plus a regular table fork for eating, since the meat stays too hot to bite right off the fondue fork.
  • If the oil cools down too much between rounds, set the pot back on the stove for a moment before returning it to the burner.

The variations

  • Swap the beef for diced chicken or turkey, it will need a bit longer in the oil and you should check it's no longer pink inside.
  • For a vegetarian version, offer halloumi cubes, whole mushrooms, and bell pepper chunks to spear and cook the same way.
  • For kids in a hurry, swap the oven baked potatoes for oven fries, ready in 20 minutes.

What to serve it with

  • Green salad with sharp vinaigrette
  • Fresh crusty bread
  • Sparkling water with lemon

Storage

Raw meat keeps in the fridge until cooking time, ideally the same day you buy it. The homemade sauces keep for 2 days in the fridge in a covered bowl. This dish doesn't freeze well and is best eaten freshly cooked at the table.

Questions about this dish
