Beef carpaccio with fries

Beef carpaccio with fries is thinly sliced raw beef served with parmesan, arugula and homemade fries, for 4 people in 40 minutes, easy level, about €4.60 per person. The key is very cold beef sliced paper thin, and fries dried well before baking so they turn out crisp.

I'm thinking a nice cold beef carpaccio, parmesan and arugula, with golden fries that crunch with every bite.

Beef carpaccio is all about the freshness of the meat, sliced almost see through, and the contrast between its soft texture and the crunch of arugula. Parmesan adds a salty edge that wakes everything up, while lemon and olive oil tie the flavors together without covering them up. It's a dish that tastes best cold, perfect for warm weather.

Homemade fries change everything here, golden and crisp, they bring the warm, comforting side that a plate of raw beef is missing on its own. This is a great dinner for a summer evening with adults, or a slightly festive Sunday lunch that doesn't take hours in the kitchen. Mon Chou likes this kind of simple balance between freshness and indulgence.

The step by step recipe

  1. Preheat the oven to 220 °C. Peel the potatoes, cut them into sticks and rinse them under cold water.

Rinsing removes the surface starch, which is what makes fries turn soggy.

  2. Dry the potato sticks well, toss them with sunflower oil and spread them out on a baking sheet.

Use parchment paper and a single layer of fries, otherwise they turn soft.

  3. Bake the fries, flipping them halfway through cooking. 30 min

Salt only once they come out of the oven, salt softens the crust.

  4. Arrange the thinly sliced beef on plates, then drizzle with olive oil and lemon juice.

Lay each slice flat without overlapping, for a nice petal effect.

  5. Scatter arugula, parmesan shavings, fleur de sel and pepper on top, and serve with the hot fries.

Shave the parmesan with a vegetable peeler for thin, pretty curls.

Our tips to get it right

  • Pick a lean, well trimmed cut like tenderloin or rump steak for a pleasant texture when eaten raw.
  • Plate and serve the carpaccio right away, the meat loses its fresh color if it sits out too long at room temperature.
  • Cut the potato sticks into even sizes so they all finish cooking in the oven at the same time.

The variations

  • Swap the beef for thinly sliced fresh salmon for a carpaccio that's just as light and quick to plate.
  • For a vegetarian version, make a carpaccio from very thinly sliced raw beet or zucchini, with the same parmesan and arugula topping.
  • To save time, swap the homemade fries for frozen oven fries, they still turn out fine as long as you don't crowd the baking sheet.

What to serve it with

  • A glass of chilled dry white wine
  • A simple green salad on the side
  • Sparkling water with lemon

Storage

Seasoned raw beef doesn't keep, so plate the carpaccio right before serving. Fries taste best eaten right out of the oven, since they lose their crunch as they cool. You can peel and cut the potatoes a few hours ahead and keep them in cold water in the fridge.

Questions about this dish

Can you buy the beef already sliced for carpaccio?

Yes, ask your butcher to slice the beef for carpaccio, that's the easiest option if you don't have a slicer at home. Keep the meat in the fridge until the last moment in that case.

How do you slice beef thin without a slicer?

Put the beef in the freezer for 30 minutes before cutting it, it firms up and slices much more thinly. Use a sharp knife and cut at an angle, against the grain of the meat.

Can you prep the fries ahead of time?

You can peel and cut the potatoes a few hours ahead, keeping them in cold water so they don't darken. The actual baking should happen right before serving though, to keep them crisp.

Can you use a different cheese instead of parmesan?

Another hard cheese like pecorino works just as well in place of parmesan, shaved the same way. Avoid soft cheeses, they won't hold their shape as shavings on the meat.

How long does it take to make a beef carpaccio with crispy fries?
